White Cheddar Cheese Sticks

Send help. I’m living in a perpetual state of paranoia and anticipation right now. Every night I go through a process of checking my phone, and making sure that I haven’t missed a call from my best friend that her water broke and that I need to rush to the hospital first thing. Being gone the last two weekends made this paranoia even worse, thinking that I was going to have to hop a plane back to Seattle at a moment’s notice and cut my vacations short – something I would have happily done.
Then, I remember that I still haven’t packed my baby-go bag! I did have the foresight to charge one of my additional camera batteries for the occasion, but what else do you pack in your baby-go bag if you’re not the expectant parent – just the best friend/photographer for the day? Beer? I do have that. For me and the daddy to be, not for the baby. In case you were wondering.

I suppose another addition into the baby-go back is also going to be yoga pants and my running shoes. If I’m hustlin’ there isn’t no way skinny jeans are going to be involved. And then, what? Snacks? If Beka can’t eat while she’s in labor, it’s probably best I not kick back like this is a sporting event with a spread of food around. But maybe a granola bar or two? Probably a protein gel slam pack from REI. Kidding, those things are dank.
So if you have any suggestions for what a FRIEND should pack in their hospital bag- Â I’m all ears! And panic.
Ingredients for White Cheddar Cheese Sticks
- Puff Pastry or Pizza Dough
- Olive Oil
- Darigold Sharp White Cheddar
- Thyme
- Smoked Paprika
- Sea Salt

I suppose snacks should be included, I’m a firm believer in fueling up – like ya know because eating is the spice of life. And the only thing always on my mind. Darigold has now come out with a new line of white cheddar, using their high quality ingredients. And it’s not just sharp cheddar, but medium, and a shredded white cheddar as well. Try them all and pick your favorite! It might be a harder decision than what goes into my best friend baby-go bag!

Description
A quick appetizer, these white cheddar cheese sticks use puff pastry for a speedy baking experience.
Ingredients
- 1 Sheet Puff Pastry, or 8 ounces prepared Pizza Dough*
- 1/4 cup Olive Oil
- 1/2 cup Darigold Sharp White Cheddar, grated
- 2 tsp Chopped Thyme
- 1/4 tsp Smoked Paprika
- Course Sea Salt
Instructions
- Preheat oven to 400 degrees. On a lightly floured surface, roll out of the dough into a 12×18″ rectangle. Brush the dough with olive oil, and sprinkle with Darigold Sharp White Cheddar. Sprinkle with thyme, and paprika.
- Using a pizza cutter, slice dough into 1 1/2″ sections lengthwise. Fold each strip in half and twist to form a rope. Place on parchment lined baking sheet. Brush with olive oil and sprinkle with salt.
- Bake for 12-14 minutes or until the puff pastry is crispy and golden.

Bring extra snacks!! She is probably going to be ridiculously hungry afterwards. I just had my third and I have really fast labours, so I know the paranoid feeling. The worst is that it can last for weeks…I was going crazy and had myself convinced that I was going to have to deliver my baby at home alone while trying to reassure my two older kids that mom yelling her head off is completely okay. I hope the call comes soon for all your sakes! 🙂

Great cheese straws! I’ll share with you the “Postnatal Cocktail” that my completely awesome birthing nurse “Nurse Nan” (she was there for both daughters, born 5 years apart) introduced to me. Super simple. 100% cranberry juice with some cold bubbly lemon-lime soda added to it, over ice. I was always so thirsty, and drank a ton of water. But I had one of these cocktails most every day in the first month after giving birth. 🙂
