Everyone loves my damn dog. More so than me. My own mom asks how he is before inquiring as to my well being. Or Ben’s well being before my own for that matter. That dog is everyone’s favorite, and if a kid within a 5 mile radius senses that a yellow lab that looks like “Marley” is in the vacinity, you know that they will be right there, running up to him and rubbing his loose old man wrinkle fur around til the cows come home. He eats it up. Huck is an absolute sucker for the attention, and it makes me really excited for the day that he will become four legged big brother.
Yesterday’s kid-palooza had three little youngsters asking me 50 questions about Huck, from his age in human years (he’s 7 1/2), to whether or not he’s married!
Wham! Kick me right in the feels there tiny human!

No, Huck isn’t married, but he does have a girlfriend I told her. She ooo’d and ahhh’d and asked if they go on dates. It sure felt like a birds and the bees questions was imminent so I high tailed it out of there in a hurry. But it got me thinking – Huck totally needs a girlfriend, and we need another dog. Ben has firmly planted his paddies saying ‘no second dog until we aren’t living in an apartment’, but really? What is he going to do if another dog just magically appears? Worse things have happened right? I mean, we puppysat Huck’s girlfriend Maeby a few weeks ago and concluded fine, maybe a dog wasn’t right… now. But that only also establishes that I have a goldfish brain and I’m severely hormonal and nesty right now.
That might also have something to do with the fact that my best friend is about ready to pop and there is a tiny squishy human in my near future, too.
Ingredient for Peach Chipotle Chicken Wings
- Chicken Wings
- Peach Preserves
- Honey
- Soy Sauce
- Ginger
- Garlic
- Apple Cider Vinegar
- Chipotle in Adobo Sauce
- Salt
- Pepper
- Cilantro

Sigh… someone just bring me something to cuddle will you?!
Either that or bring me a bucket of wings and a beer. Another bucket of these peach chipotle chicken wings will do just fine. Jusstttttt fine.

Description

Ingredients
- 3 pounds Chicken Wings
- 1 cup Peach Preserves
- 1/4 cup Honey
- 2 Tbsp Soy Sauce
- 1 tsp grated Ginger
- 2 Cloves Garlic, minced
- 3 Tbsp Apple Cider Vinegar
- 3 Tbsp Chipotle in Adobo Sauce, minced (use more or less to taste)
- Salt
- Pepper
- Cilantro for garnish, minced
Instructions
- Preheat oven to 400 degrees. Line a baking sheet with parchment paper or a silicone mat.
- Pat each chicken wing dry with paper towels lay out on lined baking sheet skin side up. Season with salt and pepper. Place in oven and begin to bake.
- While the chicken wings start to bake, mix all remaining ingredients together in a bowl. Set aside approximately 1/3-1/2 cup of the mixture into a smaller bowl. This will be used for tossing the chicken wings just prior to serving.
- Using a pastry brush, open oven, and slather chicken wings with the remaining sauce. Close oven and continue to cook for 15 minutes.
- Flip chicken wings after about 15 minutes and continue to cook.
- Remove from oven and toss remaining sauce over the chicken wings. Serve immediately.

What changes should I make for making this with drumsticks? Marinating them some hours, maybe?
That’s a great question! I don’t think you need to marinate, but they may take longer to cook overall. Try by increasing the time, and monitoring with an instant read thermometer.
