Kopanisti Dip and Heather Christo’s The Generous Table Giveaway
Give me a snorkel, I’m going in!! I’m running low on Triscuits, bread and things to dip into this soooo if you’re going to the store can you pick me up some extra? Thanks. Pick some extra up for yourself too, because this Kopanisti dip, from my lovely friend Heather‘s new book The Generous Table is going to totally knock your socks off. Socks knocker off-er.
I’m so very fortunate to live near Heather and have had the chance to get to know her through her gorgeous site and in person. She lights up whatever room she steps into, her genuine personality just radiates and oh my gosh, I can’t get over her laugh. Watch her book trailer! See what I mean? It just makes you smile.
A couple of months ago Heather, Beka, another girl friend and I had brilliant plans to go wine tasting through my little wine town which turned into us wine drinking and eating at one restaurant for hours, why lie here this is a safe space – and amongst the laughs, the chatter of child rearing, travel plans and husbands with hair brained ideas, and duh FOOD, we listened to Heather talk about this dip and it’s all to true addictive properties. Naturally, it just catapulted it to the top of my list of things to try as soon as I got my mitts on her book. It’s as old world as it gets, right from the yayas to Heather, to you.
She totally mastered this gorgeous dip. She even suggested using it as a sandwich spread – which is totally inspired. I am totally all for the eat-it-with-the-spoon approach, but I’ll be civilized.
Heather’s kopanisti is loaded with feta, roasted red peppers, mint (Mind. Blown.), garlic, pepper and zesty lemon. Yeah, seee – now you know why I’m out of things to dip into this?
Oh…There might have also been a slight issue with my indecisiveness because I also had to make her Meltaway Cookies, too. Don’t judge me. I just…just.. couldn’t not make them. LOOK AT ‘EM!!
So don’t mind me – but I have some dip to go devour and Ben just ate the very last of the Meltaway cookies, so I’m fresh out. I made him eat the remaining two so I didn’t feel so guilty about eating the entire batch myself. Glutton. It was a tense and honest moment with myself. I had to step away, they were too good.
With Heather’s book coming out on May 1st, we want to make sure that one lucky reader gets a signed win-it-before-you-can-buy it copy of Heather’s book The Generous Table. It’s full of seasonal recipes, and each season has celebrations that coincide with that time of year. So whether you’re celebrating a picnic, Easter, and open house brunch, or a big family birthday – Heather has you totally covered. Your friends will be utterly impressed. I just know it.
So go wish Heather a huge congrats on her stunner of a book. She is a gem through and through, you will love every single page.

Gotta love a dip that has a base of feta! This looks amazing. Heather’s Berry Skillet Crisp is calling my name, for sure!
I am so excited to have this delicious recipe! I order kopanisti dip all the time at a Greek restaurant we frequent, but I have never tried to make it at home. Now I can! Also, my mint plants (like weeds) are beginning to go wild. Recipes that use mint by the cupful are much appreciated. 🙂
I don’t know how you’d choose either! Both look AMAZING Megan!
ahhh this dip and those cookies – i had a hard time choosing a recipe from her book to make too!! they’re all so good!
Seriously..what an AMAZING flavor combo! I want to dive head first into this!!
I’d love to try either Heather’s Spicy Halibut Ceviche or Triple Coconut Cinnamon Rolls!
I would make the Pesto Pea Pasta. I love peas, I used to eat them as dessert when I was kid. Pie? No thanks, gimme the peas. It never occurred to me to make a pesto out of them.
There are so many recipes I want to make (love that she organizes them by main ingredient too), but I really want to try her Brussels sprouts fritters
This dip looks so yummy! I must get my hands on that book! I want to make her fresh chicken spring rolls!
The Triple Coconut Cinnamon Rolls are calling my name! This dip sounds pretty amazing, too.
This dip looks delicious. I’d like to try her Chocolate Peanut Butter Granola (among many other recipes). I just bookmarked that recipe yesterday.

Had this dip in a restaurant a few months ago, looked up a recipe and found this one. Finally tried it for new years eve party and it was hit of the night. Made my other dips seem bland and boring. I will definitely be adding this to my ‘must make’ list from now on.
So so pleased to hear it Lisa!! Thank you and Happy new Year!
