Gooey Butterscotch Walnut Bars

These gooey butterscotch walnut bars, are rich and ooey, gooey, like a pecan pie but with soft butterscotch and walnut pieces crumbled in. Perfect for any time of year.
Sooner or later, they say, we all turn into out mothers. I realize that my life, especially lately, has been round housing me in the face, because it’s all come full circle. When I was a kid, the standard Saturday morning TV viewing wasn’t cartoons – it was episodes of This Old House. And I hated it. Why couldn’t I park my arse in front of the TV and watch my endless episodes of Garfield and Rugrats? But no, it was PBS, This Old House and New Yankee Workshop with Nom Abram who built lots of drawwws.
Fast forward 20 years, and with the Zillow-apping, house dreaming and imaginary house hunting I’m on, Ben and I have take up binge watching reruns of, you guessed it, This Old House. It also gives me a nice break from Breaking Bad, because there is only so much of that I can mentally taken in in any given time.
And just like that I am turning into my mother.

A mother who also watches Tosh.O. A mother who also loved Breaking Bad. And one that knew of my deep affinity for Butterscotch Chips.
Every Christmas 7-Layer Magic Bars made the cookie platter cut. They were my favorite of the Christmas cookies and I lived for opening the bag of butterscotch chips and free basing them right out of the bag. I’m pretty sure only about 3/4 of the actual butterscotch chips ever actually made it into the recipe… The rest went directly into my face.

But that flavor, those cookies and that time of year always reminded me of my mom. Since today is her birthday – HI MOM – I felt it only necessary to sacrifice a bag of butterscotch chips in her honor. I’m sure she wouldn’t mind.
Mom, thanks for always being my person, my friend, and my daily source of inspiration, laughs, and my magic mirror that shows me what a great future I have a head of me. If they say we all become our mothers – I take that as the world’s best compliment and fortune.


Gooey Butterscotch Walnut Bars

Description
These gooey butterscotch walnut bars, are rich and ooey, gooey, like a pecan pie but with soft butterscotch and walnut pieces crumbled in. Perfect for any time of year.
Ingredients
Crust:
- 1/2 cup Butter
- 1/2 cup Brown Sugar
- 1 1/4 cup Flour
Batter:
- 2 Tbsp Butter, melted
- 2 Eggs
- 1 cup Brown Sugar
- 1 tsp Vanilla
- 1 Tbsp Flour
- 1/2 tsp Baking Powder
- 1/4 tsp Salt
- 1 1/2 cup Walnuts, chopped
- 1 cup Butterscotch Chips
Instructions
- Preheat oven to 350 degrees. In a stand mixer, beat together 1/2 cup butter for crust and brown sugar until light and fluffy. Mix in flour until a crust forms.
- Line a 9×9 square baking dish and line with parchment paper. Press the dough into the pan firmly and bake for 10 minutes, or until just golden brown. Remove from oven and cool.
- In a large mixing bowl, whisk together the eggs, sugar, butter, vanilla, flour, baking powder and salt.
- Add in the walnuts and butterscotch chips. Pour into the cooled cookie crust.
- Bake for 25-30 minutes or until the top is set and dark golden brown. Remove from the oven and let cool completely before removing from the baking dish.
- Run a knife around the edges of the baking sheet if the bars have baked into the side of the dish and crystalized.
- Using a long knife – to avoid running the knife through the bars – cut into 16 bars. Serve.

Just wondering….. Can you use other chips and still have the same delicious result ? I only have white and chocolate chips at the moment. If not , I will run out and get some .
Butter scotch definitely have their own unique flavor that isn’t like chocolate. Though you can make these with white or regular chocolate chips, I think you should try them with butterscotch first then try a different variation the next time. You won’t be disappointed – I promise!! 🙂
These cookies are dripping with gooey deliciousness. Yup, I turned into my mom. It happened 2 years ago. It snuck up on me and pounced–I didn’t even see it coming.
It always seems to happen that way doesn’t it? Wake up and BAM we became our mothers. But, you know, it’s not nearly as bad as I imagined it would be 🙂
NUT! I looooove nuts! I have a whole freezer full of walnuts, and by my calculations, that’s a lot of bars to be made!!! Butterscotch just warms my mind body and soul. Need, need, need!

Baked this twice and was great in the household. First time it was pretty runny when I took it out but cooked, putting it in the fridge over night fixed that. And the second is coming out the oven soon
