Description

These gooey butterscotch walnut bars, are rich and ooey, gooey, like a pecan pie but with soft butterscotch and walnut pieces crumbled in. Perfect for any time of year.


Ingredients

Crust:

  • 1/2 cup Butter
  • 1/2 cup Brown Sugar
  • 1 1/4 cup Flour

Batter:

  • 2 Tbsp Butter, melted
  • 2 Eggs
  • 1 cup Brown Sugar
  • 1 tsp Vanilla
  • 1 Tbsp Flour
  • 1/2 tsp Baking Powder
  • 1/4 tsp Salt
  • 1 1/2 cup Walnuts, chopped
  • 1 cup Butterscotch Chips

Instructions

  1. Preheat oven to 350 degrees. In a stand mixer, beat together 1/2 cup butter for crust and brown sugar until light and fluffy. Mix in flour until a crust forms.
  2. Line a 9×9 square baking dish and line with parchment paper. Press the dough into the pan firmly and bake for 10 minutes, or until just golden brown. Remove from oven and cool.
  3. In a large mixing bowl, whisk together the eggs, sugar, butter, vanilla, flour, baking powder and salt.
  4. Add in the walnuts and butterscotch chips. Pour into the cooled cookie crust.
  5. Bake for 25-30 minutes or until the top is set and dark golden brown. Remove from the oven and let cool completely before removing from the baking dish.
  6. Run a knife around the edges of the baking sheet if the bars have baked into the side of the dish and crystalized.
  7. Using a long knife – to avoid running the knife through the bars – cut into 16 bars. Serve.
