Nutella Pecan Pie Bars

A much easier to transport version of your favorite holiday pie, all with a little added chocolate in the bottom! These Nutella Pecan Pie Bars are going to be your go to holiday treat!
Dish Count :: 1 Food Processor, 1 13×9 Jelly roll pan, 1 saucepan

Do you make lists? Is there something really satisfying about crossing something off your list? Or putting a check box next to it? I’m a check-box-er. But still, it is a satisfying feeling when you can swoop that little mark through a box and consider one more thing now one LESS thing.
At work I’m a chronic list maker, on paper. At home, I’m a list maker, in my head. At this stage in the game with the kid only a couple weeks away there is a list the does not appear to be shrinking – only growing – and it is really time I write it all down so I can buckle down.

Maybe you can help? Really the sad truth is that when I’m at home, I want to relax! I don’t want to do those little things and I turn into the worst procrasti-baker known to man. These nutella pecan pie bars are proof of it. So, please. HELP ME.
For the Kid ::
- Hang the wall art in his room.
- Buy the last minute bottle brushes, changing pad covers, and stuff from the registry.
- Move the nursing chair into the room
- Buy the cow hide rug on our Amazon registry before Ben can object to it. It’s a National Parks theme room, so it isn’t as strange (or creepy) as it sounds!
- Put away his clothes! Which are currently in a pile on our living room sofa. Every house has THAT chair. It’s our whole sofa right now.
- Finish putting together the baby go-bag. And my go-bag. And Ben’s go-bag.
- Put the car seat base into the car. And by that I mean BEN put the base into the car.

For me ::
- Find the kid’s pediatrician!
- Fill out the FMLA paper work for work. Because my company is the worst at assisting with this process, it has been like pulling teeth to get all the stuff done in advance. Nothing like two weeks before he arrives to do the paperwork!
- Finish freezer meal prep.
- Vacuum.
- Work on baby shower Thank You cards
- Sleep?
- Sit down. Or so people keep telling me to do…

What I really keep doing ::
- Rolled coins from our change jars… hey, found an extra $85 we didn’t realize we had.
- Made pecan pie bars
- Started binge watching Outlander. OMG I miss Scotland! The accents. The kilts. Inverness!
- Stared at the pile of clean laundry on the sofa and not folding it or putting it away.
- Opened all the windows during the first good rain in THREE MONTHS and taking a two hour nap in the recliner.
- Made a list of all the foods I am going to eat as soon as Eviction Day hits. Sushi and red wine are top of the list. So is ice cream and chocolate cake. And pizza.
- Went to Target for mom-gear.
- Got a haircut and my eyebrows waxed.
So, really on some front it has been very successful and productive… But just not in the areas it should have been. So help me – what am I missing? What else do I need to do before the kid arrives? What else needs to go on my midnight breastfeeding binge watch list? Any good books I need to read? What are your favorite post-kid work out videos?
I like lists. And now I am going to commit to writing it all down. Maybe then I’ll stay on track.
Ingredients for Nutella Pecan Pie Bars
- Flour
- Sugar
- Salt
- Unsalted Butter
- Brown Sugar
- Light Corn Syrup
- Butter
- Eggs
- Chopped Pecans
- Vanilla
- Nutella

Nutella Pecan Pie Bars

Description
A much easier to transport version of your favorite holiday pie, all with a little added chocolate in the bottom! These Nutella Pecan Pie Bars are going to be your go to holiday treat!
Ingredients
- 2 cups Flour
- 1/2 cup Sugar
- 1/8 tsp Salt
- 3/4 cup Unsalted Butter, cubed and chilled
- 1 cup Brown Sugar
- 1 cup Light Corn Syrup
- 1/2 cup Butter
- 4 Eggs
- 2 1/2 cups Chopped Pecans
- 1 tsp Vanilla
- 1 cup Nutella
Instructions
- Preheat oven to 350 degrees. Line a 13×9 jelly roll pan with parchment paper.
- In the bowl of a food processor, pulse together the flour, sugar and salt. Add in the cubed butter, and pulse until pie crust that develops looks like large wet sand.
- Press the mixture into the bottom of the jelly roll pan, and up the sides to create a crust. Using a fork, poke several holes into the pie crust base to reduce puffing of the crust.
- Bake for 15-18 minutes, or until it just begins to turn slightly golden brown. Allow it to cool slightly.
- Spread the Nutella over the bottom of the pie crust, allowing the heat of the pie crust to melt the Nutella slightly and make it easier to spread.
- In a saucepan, bring brown sugar, corn syrup, and remaining 1/2 cup of butter to a boil.
- Remove from the heat, and stir in the eggs, one at a time, and vanilla. Stir in the chopped pecans.
- Gently pour the whole mixture into the pie crust. Bake for 30 minutes until the filling is set.
- Remove from the oven and allow to cool completely before cutting into bars.

Boy oh boy, you’re preaching to the choir about lists. I’m an excel spreadsheet and list FREAK. I have lists for daily chores, for monthly projects, and even an adventure list of places I want to hike and camp in my state of Oregon. I can geek out about lists all (swear word) day!. Glad to hear I’m not alone 🙂

OK, probably the most important thing is to find the pediatrician. He/she is likely to become important in a relatively short time. Might try looking under the pile of clothes on the couch. They’re sneaky.
Next, pat yourself on the head for growing a human being. Not all of us can do that. I, for instance, can’t. Well, I’m male, but let’s not let excuses like that dampen the praise that you deserve.
Rolled coins? See, even in the midst of all this chaos, you’re making money for the family. Laudable.
The watching of Outlander is obviously an effort to improve the timbre and cadence of your (undoubtedly already perfect) voice, so that the lullabys are more effective.
The eyebrow waxing is a but out there, but needs must.
As for the rest of it, forget it. Especially the vacuuming. Dust is a fine thing. Or at least, it had better be, else my house is doomed.
Above all else, take care of yourself. Your rallying cry is “Can it wait?!”.

HA! Thanks Joe!! I like this “Can it wait?!” mantra. I should take that up and make sure I’ve got my focus right for snuggling this impending little joy instead of worrying about all the stuff we “need” to get done. It will get done in its own time. I feel like the only thing that matters (okay other than finding a ped doc for tater tot) is binge watching Outlander while noshing on these nutella pecan pie bars!

Always read comments to see how others did with recipe & consider any helpful hints. This recipe has no comments about bars only about lists ! They are in the oven now so jury still out. A few notes. When adding eggs to hot saucepan of syrup they start to cook even though stirring continuously. 9 x13 pan used overflowed even though I brought parchment up 1″ on all four sides. If I make again would use baking sheet with higher sides. Hope this helps will let you know how they fare
