There is a reason I do most of the grocery shopping for Ben and me alone – because he’s the most impulsive shopper ever. I used to think I was bad, yanking anything baking related off of the shevles and into my cart. But when we got engaged and started living together he used to hate that I went to the store two or three times a week to get one or two things that I needed for a project and came home with 7 and then we still didn’t have what we needed for lunches, or dinners. I was an atrocious meal planner. So now I make the list, (mostly) stick to it and come home with what’s listed. Boringgg!!!
A couple weekends ago Ben and I packed up our things and headed off to a weekend in the mountains with our friends, and headed to the local store to stock up on sundries for a couple breakfasts and snacks throughout the days we were there. And everything about our former shopping-list-vention went out the window. But it wasn’t my fault – it was allll him and Jackie (I blame them because it makes me feel better). A bag of Pepperidge Farm Lexington Cookies made it into our cart, along with a package of Oreos, chips and sodas all followed us home. Fat-kid-food-a-palooza! This would have never happened if I was shopping alone. And the worst part was, the Lexington cookies from the bag were crunchy. Crunchy cookies are the biggest cookie crime out there. Unless its an Oreo, it shouldn’t have a crunch – and these did. Blasphemy!
Naturally, I had to prove it to myself and to the Pepperidge Farm Cookie Company that I could best their crunchy Lexington Cookie and beat it to its own game! Oh yeah…I won. Boo-yahhh!!
Any cookie with toffee bits, chopped up almonds and copious amounts of chocolate speaks to me on some primal level. Oh and since I ran out of chocolate chips while I was making the cookie batter (because it wasn’t on the list!) I added in an entire bag of chopped up Hershey’s Kisses. Look at me being a rebel…
Oh and there was that cup of Heath Bar brickle bits in there too. For balance.
So to keep your marriage in good working order – make a shopping list, stick to it, and make better cookies than Pepperidge Farm. You’re welcome.

- Baking Soda
- Salt
- Butter
- Brown Sugar
- Sugar
- Eggs

Description
A chewy, homemade version of the Pepperidge Farm Lexington cookie, full of toffee bits, chopped up almonds and copious amounts of chocolate!
Ingredients
- 2 cups Flour
- 1/2 tsp Baking Soda
- 1/4 tsp Salt
- 1 cup Butter, cubed
- 1 cup Brown Sugar
- 1/2 Sugar
- 2 Eggs
- 1 Tbsp Vanilla
- 2 cups Chocolate Chips
- 1 cup Toffee Bits
- 1 cup Almonds, chopped
Instructions
- Preheat oven to 300 degrees. In medium bowl, whisk together flour, baking soda and salt.
- In a stand mixer, beat together butter, brown sugar and sugar until light and fluffy. Add in eggs, one at a time and mix in between additions. Add in vanilla.
- With the mixer on low- add in 1/2 cup of flour mixture into the batter a time. Once it’s all added in, pour in chocolate chips, toffee bits and almonds. Mix until just combined.
- Spoon onto a baking sheet with dough balls about 2″ apart. Bake for 21-22 minutes.
- Remove from baking sheet and cool on wire rack. Devour.
You can never go wrong with chocolate, almonds & toffee!!

You and I could do some real cookie dammage considering we have the same cookie taste. I’ve never been interested in crunchy cookies other than the oreo or the thin mint. I’m firm in the belief that cookies should be soft, warm gooey and packed with goodies. Pepridge Farm could really use you as a cookie consultant!!
My husband is the same way! Every time we divide and conquer at the grocery store, he comes back with a million things off the list! I mostly go along if possible… 😉

There’s no sticking to a shopping list when you’re on vacation! I do the same as Ben…all sorts of things that I would never buy at home end up in my cart. But everytime I eat store-bought cookies, I reminded of the fact that there’s NOTHING as good as a homemade, fresh from the oven cookie. These look fantastic!
A shopping list on vacation?!? That’s weird. ha ha I haven’t eaten Pepperidge Farm cookies since I was a kid – never been a fan. But these?!? OH I could easily be a fan.

toffee, chocolate, almonds – these are such classy cookies! so many goodies inside that I love. Oh! And I am a horrible meal planner. My fiance and I just moved in together and I see lots of expensive grocery store trips in our future. I literally go to the store about everyday. :-/
This is so hilarious. I’m awful when I go shopping alone. I realized that the other week when I got to go grocery shopping without kids. OMG I swear I took my time and bought everything I saw. Bad me. And you are so freaking right – no crunchy cookies!
Looking good like always! I never let the hubs go grocery shopping with me he’s the same way. In fact a worker (he’s also my brother’s best friend and I live in SMALL town MN) at our local grocery store asked why he never was with and I had to tell him he fills my cart with JUNK!
I think Ben’s just preparing you for grocery shopping with a toddler, now you’re all set 😉 Oh and I heart that you added toffee bits.

I go shopping alone too because jason gives the face of death whenever i’ve got a huge shopping list. and also, when jason goes shopping, he buys junk too. he comes back with like a 6-pack of random beers, 2 bags of chips, just rando stuff. love these cookies – they look bomb!!

I think men inherently don’t know how to grocery shop. They always come back with the most random ingredients you couldn’t possibly make a meal out of. But I think you beat Pepperidge Farm at its own game, these cookies look a thousand times better.
I am STILL the WORST when it comes to meal planning. Sigh

I would say that you should be the new Pepperidge Farms baker. They definitely need your input!! Your recipe produces the perfect texture for a cookie (in my opinion, anyway); crunchy on the edges and soft and chewy in the center. Yum.

Megan, these are totally awesome. I’ve made them three times so far and am in the process of making them again, right now. I think they are even better than the Pepperidge Farms cookies. One thing I need to know, how are you baking these?? I tried using a silpat, but they didn’t expand enough and I had to put them back in the oven twice to cook them through. I tried parchment on the cookie sheet and they still didn’t expand enough. I used a greased cookie sheet but then, they expanded too much and, finally, I tried an ungreased cookie sheet but the toffee melted onto the sheet, making the cookies stick terribly to the cookie sheet. Do you have a secret baking method?Â
Hi Kaye! I’m sorry you were having issues with the cookies – though I’m glad you love them!! I wil definitely have to make these again soon! I use a light aluminum baking pan for my cookies. It’s an old crusty looking thing, no bells or whistles as baking sheets go. If you have a light colored baking sheet, try that! And be sure to check your oven temp with an oven thermometer, and use new baking soda and baking powders. I’m wondering if those might be causing an issue as well. Good luck!
