You won’t believe your taste buds with this Bourbon Banana Nut Stuffed French Toast. Roasted bananas, creamy cheese, and cinnamon make a great way to start your weekend!

I’m really curious, but when did songs from the 90’s become OLDIES?! No. That’s not right. It’s just not right. When the Red Hot Chili Peppers start making their way onto the oldies station, something is very wrong in the universe. Any time any one references, “10 years ago”, I always think it’s still the early 2000’s and I am thinking back to the 90’s. Seriously, where is my head?

Whenever you ask me about the OLDIES, it should be stuff from the 50’s, not from the 90’s!! DJ Tanner, and scrunchies, with neon patterned sweaters and sayings like “What if?”, are not oldies!!
Huey Lewis and the News? Still, not the oldies – but getting older.
The Supremes? Classics – but that’s the oldies.
Elvis? Again, the OLDIES!

Red Hot Chili Peppers? Not Oldies.
Sublime? Definitely not oldies.
Chumbawumba? I listened to Tubthumping on repeat in 6th grade!! I’m not even 30 yet. Doesn’t something become Oldies once you pass the 30’s threshold? Even 35? Dang it modern radio – don’t make me feel older than is ever humanly necessary!

But this is still the same girl who jokes about not being old – but can’t make it past 9 pm on a Friday night and zonks out on the couch watching Gold Rush with her husband.
The same girl, who craves Cream of Wheat covered in cinnamon and raisins on frosty days.
And the same girl who yells and shakes her fist at youths blasting their car radios that reverberate the windows in my car…
And the same girl who eats on three hour schedule, and does dinner by five.
Ingredients for Bourbon Banana Nut Stuffed French Toast
- Brioche
- Bananas
- Cream Cheese
- Bourbon
- Cinnamon
- Pecans
- Eggs
- Milk
- Vanilla
- Maple Syrup

So…maybe I am older than I think.
But I still maintain that the Red Hot Chili Peppers – ARE NOT OLDIES!!

Bourbon Banana Nut Stuffed French Toast

Description
You won’t believe your taste buds with this Bourbon Banana Nut Stuffed French Toast. Roasted bananas, creamy cheese, and cinnamon make a great way to start your weekend!
Ingredients
- 1 Loaf Brioche, sliced 1 1/2″-2″ thick
- 2 Bananas, sliced
- 4 ounces Cream Cheese, softened
- 2 Tbsp Bourbon
- 1/2 tsp Cinnamon
- 1/2 cup Finely chopped Pecans
- 2 Eggs
- 1/3 cup Milk
- 1 tsp Vanilla
- Maple Syrup
Instructions
- Heat oven to 350 degrees. Place sliced bananas onto a non-stick baking sheet and bake for 20 minutes until the bananas start to gently caramelize. Remove from oven and let cool slightly.
- While the bananas are baking, take each slice of brioche, using a sharp pointed and serrated knife, lay the slice flat and like you were slicing the bread horizontally, insert the knife flatly into the bread and slice a small pocket into the middle of the bread, ensuring you don’t puncture through the bread. Repeat with each slice of brioche. Set aside momentarily.
- In a bowl, mix together cooled bananas, bourbon, cinnamon, ¼ cup pecans, and cream cheese until smooth.
- With a spoon or knife, or a piping bag with a round tip and filled with banana mix, spread into the pocket of each bread slice.
- In another shallow bowl whisk together, milk, eggs and vanilla.
- Dip each slice of stuffed brioche into the egg wash and place into a heated, and non-stick sprayed pan over medium to medium-high heat. Cook until each side is deep golden brown. Flip and cook completely.
- Serve immediately with additional bananas and chopped pecans on top. Top with maple syrup.

Omg, I am eating cream of wheat (with bananas and raisins) as I read this….and I totally spiked the french toast this weekend. Let’s do brunch while listening to 90s music! It’s probably another sign of age that I also consider this decade the best music of all time.

There’s nothing that makes me feel old more than my fav songs growing up being on an oldies station, OR even worse my favorite TV shows being on Nick at Night, ummm hello Friends. What?! But, I agree, while I’m in disbelief at those revelations, I also never stay out past midnight anymore and never sleep in later than 7:30am, BUT I get up early so I can enjoy amazing breakfasts like these. The ULTIMATE french toast. Yum.

Couldn’t agree more. I feel like 10 years ago I was in elementary school, not graduating high school! EEEK! And don’t get me started on youths. Were we that obnoxious at 19? I’m sure we weren’t…right? Oh well, I want to eat this for dinner, because gosh darn it if there’s any benefit to being an adult it’s getting to eat whatever I want whenever I want. 🙂
I can’t believe Red Hot Chili Peppers are considered oldies! Who’s running the radio stations 12 year old gees! Then to find out friends is on night at night what is wrong with this world! I just added another 20 years on to my age in a matter of minutes.. I think I need to make this French Toast to help calm my nerves!

There is a Buzzfeed post that makes me feel SO OLD. Apparently Kenan and Kel are 36 and Angelica from Rug Rats would be 27 today (what!?)I didn’t realize I was as old as Angelica. Don’t feel too bad about the radio. All stations are trying to appeal to younger generations because no one advertises to baby boomers. (Thanks Google!)
