Squash recipes are so plentiful this time of year and that’s because it is versatile, and can be baked, roasted, put into soups, baked into nearly everything and adds not only gorgeous color, but it is full of vitamins, minerals, and lots of fiber for a healthy digestive system. Squash lasts on the counter or in the fridge for an extended period of time making it good all year long, and you can make large batches of it making it great for big batch cooking and an easy option for luxury leftover recreations.
There are lots of different types of squashes that are easy to find, some of my favorites are butternut squash, spaghetti squash, acorn squash, and delicata squash. These are popular and most common at grocery stories, but at markets you can find more regional varieties and lesser known types!
