Sweet Potato and Spring Vegetable Frittata

Is it a male thing to think they have all but saved the world from nuclear disaster if they manage to clean up the apartment the one weekend you are away? I’m just curious. Part of my weekend routine, usually post-coffee and pre-weekend-bake-athon, is to clean the apartment, vaccuum, Swiffer, clean the bathroom, dust, do the dishes and restack the piles of magazines and stuff I have spread out in varioud places around the house over the past week. I’m a serial piler.
And dont’ get me wrong, I love it when Ben helps out around the house. Maybe it’s not that he wouldn’t do it, but usually just that I end up beating him to it? For whatever reason this was the weekend he cleaned up the house and I came back from a weekend of baking to a clean house. What’s happening?

As he was listing off all of the things he completed all I could think about was what the male equivalent would be.
Taking out the recycling? The male equivalent of saving Timmy from a well.
Cleaning the toilet? Disarming the nuclear launch sequence.
Vacuuming the whole apartment. Saving a litter of puppies from a burning building.

But you know, that’s really okay. If it makes him feel like he has done something to make the world – or just my world – a better place, I think I can keep him around. And that is why I married him.


Sweet Potato and Spring Vegetable Frittata

Description
Your brunch will never be the same with this sweet potato and spring vegetable frittata. Packed with colorful veggies this shows that spring really is in the air!
Ingredients
- 1 cup pre-roasted Sweet Potato pieces, bite size
- 1/4 cup wilted spinach, squeezed of extra moisture
- 1 Heirloom Tomato, thinly sliced
- 1/2 tsp Kosher Salt
- Pepper to taste
- 1 clove Garlic, minced
- 6 Eggs
- ¼ cup Heavy Cream, or Half and Half
- 2 Tbsp Butter
- 1/4 cup herbed or regular Goat Cheese, crumbled
Instructions
- Set oven rack nearest to the broiler. Preheat the broiler. Let medium skillet (with oven safe handle) heat over medium high heat for about five minutes.
- In bowl whisk together eggs and heavy cream (or half and half), set aside.
- Thinly slice the tomato, and lay on several paper towels to wick away additional moisture. Sprinkle with salt and let rest while you prepare the additional vegetables and mince the garlic.
- Take goat cheese and crumble using a fork run over the top of the cheese, it will turn into crumbles. Set aside in a small bowl.
- Add butter to the skillet and bring to simmer. Swirl the butter around the pan so the whole pan is evenly coated. Pour egg mixture into the bottom of the pan. Things will happen quickly – shake the skillet to ensure the eggs don’t completely stick to the bottom. Run your spatula around the edge of the frittata to make sure it doesn’t stick.
- Gently sprinkle the sweet potatoes into the pan, then the sliced heirloom tomato, and then spinach.
Let the edge set in the skillet for about 2-3 minutes. Immediately transfer to oven under the broiler. - Let cook until the frittata starts to turn golden brown on top. Remove from broiler and slice and serve while warm. Top with crumbled goat cheese and serve.

Guess you’ll only know what I’m talking about if you watch Friends. Anyways, love frittatas and this combination of flavors sounds great!! You made me laugh. I am just this side of being an old bat and you have the same observation as I made about my husband, when the world was flat. The world of men never changes. And you know what? You are not even exaggerating. But you did get a clean apartment and that was very very sweet. This is a beautiful dish color wise. I like your choice of using sweet potatoes.
