Greek Totchos
Change up your game day with these Greek totchos, packed with spiced tater tots and savory hummus!

There is a little Greek restaurant that Ben and I go to on a fairly regular basis for our date nights in. It’s run by two guys, brothers or best friends, we haven’t asked, but every time we go in they are the happiest couple of dudes and they are the most eager to show off everything that they have to offer. On our first trip in there, they loaded us up with extras, their lentil soup, a couple of chocolate baklava, and my favorite – their Greek fries. It was a wholly religious experience to eat these fries. Never mind they are loaded with garlic, parsley, and some mystical spice that can only be sent from the gods… we love this place.


My go-to is always their beef and lamb shawarma platter with hummus, olives, and this lamb that is to die for!! I decided it was prudent to combine my two favorite things for this recipe – their epic Greek fries topped with feta, and the shwarma fixins on top of tots!
Our trips to this little restaurant always coincided with new episodes of Game of Thrones. It’s become a Pavlovian response that whenever I hear the sound of GoT on the screen, I perk up like the dog who heard something hit the floor.

Besides topping these Greek Totchos with Sabra’s Classic Hummus, I added in some pan grilled lamb loin chops to the mix, grilling them in my cast iron, and then slicing thinly. If you’re not feeling the lamb, go for ground chicken instead! But give lamb a chance!

Description
Change up your game day with these Greek totchos, packed with spiced tater tots and savory hummus!
Ingredients
- 1 pound Lamb Loin Chops
- 1 package Frozen Tater Tots
- 1/3 cup Kalamata Olives, chopped
- 1 large Roma Tomato, diced
- 1/3 cup Roasted Red Pepper, diced
- 1 Shallot, thinly sliced
- 1/2 cup Feta Cheese
- 1 cup Shredded Cheddar Cheese
- 1/2 cup Sabra Classic Hummus
- Salt and pepper
Instructions
- Preheat oven to 425 degrees. Preheat a cast iron skillet over medium high heat. Add 2 Tbsp olive oil.
- Pat dry the loin chops with paper towel and season both sides with salt and pepper.
- When the oil is heated and rippling, add in loin chops and sear until golden brown on the outside, about 2 minutes. Flip, and repeat to sear the other side.
- Immediately place the pan in the oven for 5 minutes. Remove from pan and allow to rest on a small plate, covered with foil to retain heat.
- Prepare tater tots according to package directions. Season with salt and pepper.
- Thinly slice lamb loins into strips. Place tater tots into a baking sheet, or serving dish. Top with shredded cheddar cheese and half of the feta. Place totchos back in the oven to melt the cheese.
- Remove from oven and top with remaining feta cheese, Sabra Classic Hummus, tomatoes, roasted red pepper, sliced shallot, and kalamata olives. Serve hot.
