Ginger Peach Daiquiri

Perhaps canning in the oppressive summer heat would be ill advised… but that didn’t stop my friend Anne and I from spending all Saturday in the kitchen at my apartment making a BOAT load of canned treats for our friends and our own pantries. From pickles, to jalapenos and even a couple of jams, we made a day out of it. And we set up a bunch of fans around the house to try and keep the heat at bay! But we did it and it was good. There are already plans to make this an annual event. After my three year canning hiatus, I’m totally down with that!
The oppressive summer heat is finally abating, and after last night’s 96 degree temps in Seattle, this cool weather is a welcome treat!! But for all the whining we Seattlites do thanks to this heat – we do absolutely love our fresh summer fruits that come with it! We’ve been completely stocked up on goodies, and I had been trying to make these ginger peach daiquiris for weeks. I chopped up a bunch of nectarines to make for these, leaving them frozen in the freezer for just the right moment to toss them into the blender and hit frappe, but I ended up using the frozen nectarines and ginger in my canning this weekend instead – for blueberry nectarine ginger jam!! It’s still setting, but as soon as I open one up I will let you know how it turns out. Fingers crossed.
One thing you won’t need to worry about letting rest before consuming – this ginger peach daiquiri! Hurry and get on this. It’s still summer, and it’s still HOT. You look like you need a drink. Here, I’m helping. *Slurp!*

Description
This ginger peach daiquiri will cool you down and brighten up your day with fresh peaches, ginger and a little rum for fun!
Ingredients
- 4 Fresh Peaches, chopped, or sliced – and half of them frozen
- 2 Limes, juiced
- 1 tsp Ginger, grated
- 1/4 cup Sugar
- 1/4 cup White Rum
- 1/4 cup Orange Juice, optional
Instructions
- In a blender, add all ingredients. Cover and blend until smooth. If the mixture isn’t blending enough, add in a tablespoon at a time of orange juice until the mixture blends consistently.
- Pour into to high ball glasses and garnish with additional slices of peaches. Serve immediately.

Blueberry nectarine ginger jam? Sounds amazing. As do these daiquiris! I mean, I’m easy, I love anything that ends in daiquiri, but these especially take the cake with that gorgeous color and added ginger zing!
I can’t believe how hot it’s been in the Pacific Northwest! Â And as I well know from my years in Vancouver, very few homes are outfitted with air-conditioning, which makes any whining absolutely acceptable. Â This daiquiri sounds flat-out amazing!

We have been lucky and had weathers in the 80’s the past two days and its been glorious! But thats about to change with a heat index of 115…yuck! All I want to cool me down is one of these daiquiris!Â
