Blogging for five years means you meet some really great people, and some of them become some of your closest friends. I’m so lucky to have that, and find constant sources of inspiration from all of them! One in particular that I’m so pleased to consider a dear friend is Julie from Table for Two. Over the last five years we’ve chatted, cooked together, had a great adventures and lots of laughs with our closest girl friends.

And now, after years of her hard work, she’s done something amazing – become a cookbook author! And when a copy arrived on my doorstep, I flipped through it, post-it’ed every stinking recipe!, and ultimately decided that this Cowboy Skillet Hash was my life’s destiny. Best destiny ever.
One of the things I struggle with in the kitchen is cooking way too much food. Ben and I then have leftovers for days, and usually around day 3 of my most recent mac and cheese creation or whatever else I made, we are dying for a switch. Julie’s cookbook is perfect for just two people, and it doesn’t include a lot of over the top complicated things that get in the way of getting a meal on the table during a busy weeknight. It’s simple, and delicious. What more do you really need?
Ingredients for Cowboy Skillet Potato Hash
- Chorizo
- Onion
- Bell Pepper
- Potatoes
- Salt & Pepper
- Any Other Toppings – Sour Cream, Cilantro, Hot Sauce, Etc

What Kind of Potatoes are Best for Breakfast?
The can be a really hard to answer question, but I want to make it as simple as possible! For a recipe like a skillet based hash recipe go with something that is small, easy to dice, and isn’t overly starchy like a Yukon Gold or a Baby Red Potato. They brown beautifully, add color and great texture, and hold up beautifully in a skillet.
For something like a hash brown, you want to stick with a potato like a Russet potato that is extra starchy, they fall apart more, and they contain a lot more moisture. They brown up beautifully in butter and oil, while staying ultra fluffy on that inside bit putting them in a skillet for a hash will have them falling apart. Unless you cook them separately, and fold them in when completely cooked through and crispy. But, that also means extra dishes!
If you want to opt for sweet potato in this recipe you can also do that. Sweet potatoes add that subtle sweetness to this breakfast hash recipe that is super delicious with the chorizo. It’s an easy cast iron skillet recipe and is very filling.

Instructions for this Cowboy Skillet Hash Recipe
In a large skillet over medium high heat brown chorizo sausage, breaking up with a wooden spoon or spatula as it cooks.
When chorizo is cooked through, about 5-7 minutes, add in the onion and bell peppers. Cook until onion and bell pepper has softened, about 7-10 minutes.
Add in the potatoes to the skillet, sprinkle with salt, and pepper.
Continue to cook hash, stirring frequently, for about 20 Minutes, or until the potatoes are softened. Serve immediately.
Top with your favorite sour cream, crema, cilantro, hot sauce, or anything else that tickles your fancy.

- 1/2 pound Chorizo, casing removed
- 1 small Onion, diced (about 1/2 cup)
- 1 cup Bell Pepper, diced
- 2 Potatoes, diced into cubes (about 2 cups) – I used 5 Medium Red Potatoes
- 1 tsp Kosher Salt
- 1/4 tsp Pepper
- Sour Cream, optional*

I followed the recipe exactly and it was SO GOOD. I also added a couple of eggs-over-easy. My husband loved it and wants me to make it part of our regular rotation. Also wants me to make it for Christmas Brush when our relatives come over.
