Ingredients

Units Scale
  • 1/2 pound Chorizo, casing removed
  • 1 small Onion, diced (about 1/2 cup)
  • 1 cup Bell Pepper, diced
  • 2 Potatoes, diced into cubes (about 2 cups) – I used 5 Medium Red Potatoes
  • 1 tsp Kosher Salt
  • 1/4 tsp Pepper
  • Sour Cream, optional*

Instructions

In a large skillet over medium high heat brown chorizo sausage, breaking up with a wooden spoon or spatula as it cooks.

When chorizo is cooked through, about 5-7 minutes, add in the onion and bell peppers. Cook until onion and bell pepper has softened, about 7-10 minutes.

Add in the potatoes to the skillet, sprinkle with salt, and pepper.

Continue to cook hash, stirring frequently, for about 20 Minutes, or until the potatoes are softened. Serve immediately.

*optional* Serve with sour cream if desired
