Cinnamon Swirl Loaded Breakfast Sandwich
This cinnamon swirl loaded breakfast sandwich is the perfect mix of sweet and savory all in one. You get a little bit of everything in every bite!

Dish Count :: 1 Skillet, 1 Baking Sheet, Foil Some Saturday nights you have too much fun. Well, not too much – you just have fun. But Sunday mornings are when things can get a little hairy, with a couple of glasses of bubbles may being your undoing. Hangovers call for four things – coffee, chocolate cookies, Excedrine, and bad-for-you breakfast sandwiches.

I’m a sweet and savory lover – if there is a sweet paired with something salty and savory I will be all over it like a lion over a downed zebra. Okay, it’s too early Monday for that visual. White on rice? Huck on a puppy treat? Me and any celebrity site with news of Prince Harry, Princess Kate, or baby prince George? Yeah, that’s probably a little better this time in the morning.
Well, I’ve had this breakfast sandwich on my list of Must Make’s for a while. I’ve told you before that I work in construction and project management – working on a great project for Boeing, where we are building the buildings that build the planes! It’s pretty neato burrito. But living in a construction trailer can some times leave something to be desired. The one thing we do have going for us? A food truck parked on site every day for breakfast and lunch.
The guys call it the Gut Truck, and it has a little bit of everything! One of the things they have is the Texas Toast breakfast sandwich packed with everything you see here. But since I’m such a sucker for sweet and savory – I had to switch out the Texas toast for some cinnamon swirl bread for that sweet twist.

So if you’re waking up this morning with a need for a little extra get up and go – this is just the ticket. And if your’e still recovering from your weekend – this will cure what ails ya, whether it’s a case of the Mondays, or just a little too much fun.
And don’t forget the extra maple syrup if you’re looking for an extra saucy sammich – or something just to amp up the sweet and savory factor.

Description
This cinnamon swirl loaded breakfast sandwich is the perfect mix of sweet and savory all in one. You get a little bit of everything in every bite!
Ingredients
- 8 Slices Cinnamon Swirl Bread
- 4 Breakfast Sausage Patties, cooked
- 8 Slices Bacon, cooked
- 1 Potato, shredded – *or store bought Hashbrown patties, prepared*
- 1 Tbsp Butter
- 1 Tbsp Olive Oil
- 4 Eggs
- 4 slices Cheddar Cheese
- Salt and Pepper
Instructions
Preparation
- Preheat oven to 225 degrees. Line a baking sheet with foil and a paper towel.
- In a non stick skillet, prepare sausage patties until cooked through. Place on paper towel lined baking sheet on one half, and place in oven to keep warm.
- Cook the bacon until cooked through, and place on lined baking sheet in oven to keep warm.
- If preparing your own hashbrown, shred potato over bowl of cold water and rinse until the water runs clear. Squeeze potatoes of excess water and pat dry with paper towels.
- Heat the olive oil and butter in the non stick skillet over medium heat, and add potatoes to the skillet. Cook for 6-7 minutes. Flip the potatoes over and cook on the other side until deep golden brown.
- When the potatoes are cooked through pour onto foil lined baking sheet in the oven to keep warm.
- Toast cinnamon swirl bread.
- In the same non stick skillet over medium heat, crack four eggs and cook sunny side up until the whites are set. Turn off heat and remove.
To assemble
- Top one slice of cinnamon swirl bread with breakfast sausage, top with sliced cheddar cheese, hashbrowns, egg and bacon.
- Top with other slice of cinnamon swirl bread. Have maple syrup on hand for dipping!

I may or may not have downed an entire bottle of bubbly with my girlfriend Saturday (after a few other cocktails) while simultaneously eating McDonald’s cheeseburgers.
