I’ve been trying to convince Ben that we need another dog for ages now – not that he is on board with this idea, since we do live in a two bedroom apartment – but for the next week we get to see if we can really do this two-dog thing for real! Our puppy friend Maeby is coming to visit and I’m over the moon! Ben… well, he might need a little more convincing.
Huck was never a “cuddly” dog per se as a puppy. If I tried to cuddle with him, he would literally get up and walk to the other side of the room to get away from me futzing with him. Jerk. In his old age, he’s become more tolerant – or too lazy to move. I get more cuddles now, so it’s not all bad to have an old dog. But Maeby is a cuddle hound, a real cuddle hound, so I don’t have to trick her into with extra treats or anything.
Ingredients for Avocado Benedict with White Cheddar Hollandaise
- English Muffins
- Eggs
- Vinegar
- Jones Dairy Frozen Turkey Sausage Patties
- Avocados
- Butter
- Egg Yolks
- White Cheddar Cheese
- Salt and Pepper
- Lemon Juice
- Water

For this recipe, I used my White Cheddar Hollandaise recipe that is my go to!! It’s incredible and zingy! And when doesn’t avocado toast sound incredible, let’s be real.
I used Jones Dairy Farm sausages for this recipe, it became really easy with their heat and eat sausages. Give them a try for this recipe!

Avocado Benedict with White Cheddar Hollandaise

Ingredients
- 4 English Muffins
- 4 Eggs
- 1 tsp Vinegar
- 4 Jones Dairy Frozen Turkey Sausage Patties, prepared
- 2 Avocados, pitted and sliced thinly
- 1/2 cup Butter, melted
- 2 Egg Yolks
- 1/2 cup White Cheddar Cheese, shredded
- Salt and Pepper to taste
- 2 Tbsp Lemon Juice
- 2 Tbsp Water
Instructions
White Cheddar Hollandaise
- In medium bowl whisk together egg yolks, lemon juice and water until light yellow. Set aside.
- In small saucepan melt butter. Add 1 tablespoon of melted butter into egg yolk mixture, whisking constantly until all butter has been whisked in.
- Pour all egg/butter/lemon mixture back into the sauce pan and over medium-low heat continue to whisk the hollandaise sauce until warmed through and thickened.
- In last minute, whisk in the white cheddar cheese and whisk until melted through. Serve immediately.
Poached Eggs
- Bring a 2 inch deep pan to a simmer, adding 1 tsp of vinegar to the pot.
- Add in eggs one at a time, gently slipping the eggs into the water, and using a spoon gather the egg whites around the egg yolks.
- Allow the eggs to simmer just until the whites are set, approximately 2 minutes.
- Remove the eggs from the water, and set aside on a plate momentarily.
Assemble the Avocado Benedict
- While the eggs are poaching, toast English muffins until golden brown.
- Top golden brown English muffins with fresh sliced avocado, and top with hot Jones Dairy Frozen Turkey Sausage Patties.
- Top the Jones Dairy turkey sausages with fresh poached egg and drizzle with white cheddar hollandaise. Serve immediately.

You have no idea how much I adore eggs benedict. But I tend to not make it at home cause I end up with a mess, so it’s my go-to for eating breakfast at a restaurant. That may need to change with this since it uses less pans!
