Did you watch the Oscars last night? Me neither. I usually browse my favorite gossip websites the next day to get the low down on the best and worst dressed, the who-stole-the-show moments, and find out who really won the prizes that I care about – best actor/actress and best picture. I’ve come to the conclusion that award shows are like a buffet line, they put up all the useless categories that no one cares about at the front of the show, like the salads of at a buffet line. And you don’t get to the carving station until the end when you’re already over loaded and regretting everything you put on your plate before.
You’re so done with the whole experience and sitting there watching TV for the last two hours, realizing you watched (while completely valid and hard earned categories), best sound editing, and production design and you are glazed over, and have been sitting on the couch with your jeans button undone to relax a little. Just like a Sunday post-church buffet.
Make your own Sunday carving station at home, one that is far tastier than a buffet line, and you don’t have to sit through 2 1/2 hours of Oscar nonsense to watch it. You’re welcome, America!

I accidentally bought way to much meat at the store this week, including one of those rotessiere chickens, when I already had one thawing in the fridge. And this pork loin. Really I don’t know why I thought two people needed THREE different meat products in the fridget at one time, so I’m making a ton of chicken soup and chicken enchiladas this week to take care of that mess. And now we have pork loin for Ben to eat before work this week!
So maybe my mistake was a happy one since now I won’t have to scramble for dinner ideas now. Happy accidents I guess and small victories for when you literally can’t even. And I have a feeling this week, will be one of those weeks. Stay tuned.

Drooling over this pork! I want this for dinner tonight!
This looks fantastic!!!
Drooling over this, it sounds so good!
We are huge pork eaters in our house, and this roast looks amazing!! That glaze!!
SO so true. I watched the whole dang thing except for the last 30 min bc I was too tired and had to go to bed! But I really only wanted to see Leo win! And nope, didn’t get to see it. Instead I watched Mad Max take home all of the awards that I could care less about.
Anyways! The glaze on this is so beautiful! It’s just so shiny and calling my name!
Could this look any better? Drooling!
Bahaha – accidentally bought too much meat! That sounds like the best problem to have;) Especially when one of them turns into this glazed pork – heck yeah!
Excuse me while I drool! Dang, this looks good – pass the plate!!
This looks tasty!
You just made pork look – and sound – amazing! I love your Oscars/buffet line analogy….so true 😉
That chipotle lime glaze is calling my name! I’m sure it’s fantastic on pork!
Wow this has made my mouth water and made me very hungry!
I didn’t watch them either! And thank goodness for too much meat! This looks amazing!
Love the chipotle lime combo!
This looks great! We’re having friends over this Saturday and are going to make this. Do you have any recommendations for sides to go with this?
I would make this with some grits and a spinach salad would be awesome. It’s not a heavy meal so that will be nice for a special spring dinner
Nice recipe. Thanks for sharing your wonderful recipe. Keep posting
Wow. This recipe. I can be something of a nervous Nellie when it comes to cooking meat, but my man was headed out of town for a bit and I wanted him to leave with a belly full of home cooked love, and boy did this pork loin do the trick. I followed the recipe exactly as written, which was super easy and resulted in an extremely flavourful and exceptionally tender roast. Served with a spicy jicama slaw and simple honey cornbread, we were both very satisfied. This will definitely be making a regular appearance at our table. Thanks!
