Christmas Rituals and Routines
So many of my formal pre-Christmas rituals have gone out the window. Never listening to Christmas music before Thanksgiving? Gone. I’m on a Christmas music bender.
No Thanksgiving or Black Friday shopping? So long!! The deals were too good to pass up. Has my new motherhood driven uber thriftiness taken over so soon?! The things I swore I wouldn’t do like my mother, have taken hold in me at a rate I never imagined possible! Coupon clipping, deal hunting, cringing over spending an extra $10 pains me so!
But some things did stay slightly the same – I spent the time with family quietly and enjoying our time together without running to the stores or camping out like a maniac. These special holiday times together are too few and far between to go from the dinner table to Target without a second thought.
No deal is too good to miss out on time together.
One of my favorite things about the holidays are those special little times. This is the time of year to catch up and take things a little slower than you have the rest of the year. Go visit those who you haven’t had time to see for a while, and strike up that precious conversation with a warm cup of coffee in hand and a smile on your face. This is the season of cheer for a reason.
And now that I have given into the early Christmas music listening, the early holiday shopping, it’s time that I also give way to the drinking of EGGNOG!! One of my favorite things of the season. It is the pumpkin spice of Christmas, and I am 110% behind that!

Ingredients for Eggnog Cake
- 1 package Yellow Butter Cake Mix, or yellow cake mix.
- 3 Large Eggs
- 1 cup Eggnog
- 1/2 cup Vegetable Oil
- 1/4 tsp Ground Nutmeg
- 1 1/2 tsp Rum Extract
- 1/4 cup Powdered Sugar, optional for topping

For all the from scratch baking and cooking, I love a good boxed mix cake because it is delightfully predictable and delicious! There is nothing wrong with going with what you know, remember and love. Embrace the consistency and unwavering sameness that comes from a mix. Also THE TIME SAVINGS!
For this easy eggnog bundt cake I started with a yellow butter cake boxed mix from the grocery store, and doctored it from there to get the perfect eggnog flavors! It is easy, fluffy, butter, spicy and delicious.
If you need a quick treat to make or gift to someone – this is it! The best part is there is no actual alcohol in this, just the rum flavor from the extract. If you want to make this recipe from scratch, or use a vanilla pudding mix in there as well, go for it.

Instructions for Easy Eggnog Cake Recipe
There is no shame in the use of boxed cake during the busy holiday season, it’s always a hit! Embrace the easy stuff during the chaotic holidays.
- Preheat oven to 350 degrees.
- In a large mixing bowl or stand mixer with a paddle attachment, cream together ingredients from cake mix through rum extract.
- Pour cake batter into a lightly greased or non-stick sprayed bundt pan. You can also use cake pans and create a layer cake style cake or tea cakes.
- Bake according to cake mix package directions for bundt cake. Let the cake rest in the pan 10 minutes on a wire rack prior to attempting to remove from the pan. Test the doneness with a toothpick until it comes out clean with just a couple of crumbs attached.
- Cool completely. Sprinkle with powdered sugar (and a dash of cinnamon or nutmeg, if desired.) prior to serving if desired.

How Do I Prepare A Bundt Pan or Cake Pan?
There are a couple of ways to prepare a bundt pan or cake pan. You can grease it with non-stick spray like a canola oil spray. There are also sprays specifically for baking that include flour in their mixture. Also, you can butter or grease your pan lightly with Crisco or butter, and then sprinkle in flour. Can I make an Eggnog Glaze for this cake?
Sure! To make an eggnog glaze, add one cup of powdered sugar, 1-2 tablespoons of eggnog, and whisk together until smooth. Add in additional rum extract, vanilla extract, and a pinch of salt if desired. Glaze the top of your cake as desired!

Do you use the baking spray that has flour?
I do not, I just used straight canola oil spray. But you could use one that has flour if you wish!

Can I just sub rum for the rum extract if I can’t find it?
Yes, you can. But it may not taste quite as concentrated as if you used the extract. Just be fairly warned. But it will still taste delicious!
Can’t find yellow butter cake mix
I live in Toronto Canada
Will yellow cake mix be ok??
Yes it will be fine. If you can find “butter extract” to give it the buttery flavor, add a touch of that to the mixture. But yellow cake should be just fine 🙂
The recipe called for 1 cup of eggnog and the cake mix calls for 1/2 cup water do I use both or do I substitute the eggnog for the water?
