Romance isn’t dead, y’all. Because this weekend I woke up to the wondrous sound of Ben unloading the dishwasher. It was a sweeter sound than percolating coffee! Okay, well almost. Because coffee. But if that isn’t true love – doing the most hated of tasks, especially since I’m the one who created most of the dirty dishes in the first place, I don’t know what is.

The first time that I gave these surprise sugar cookie stacks ago was a few years ago for Halloween, and I was determined to make them again for Valentine’s Day… sadly, that Valentine’s Day was three years ago. But I got around to it! Yay, me! *eye roll*
Normally Ben and I don’t go overboard for Valentine’s Day. After this year’s epic search for the best Christmas gift, which resulted in me giving him new hiking boots – totally uninspired, albeit necessary – I’m not mentally prepared for another holiday of gift giving. It’s too much.
Really I like to take Valentine’s Day as a day to remind us to show love, kindness and affection to one another, because with schedules like we all have – I just don’t want us to become ships passing in the night, or afternoon as it were. When we are both so crammed to the gills with our schedules, the only quality time we end up with during the week could be the time that I made him his sandwich for work before he kisses me on his way out the door. So although it seems contrite, and expected, and forced to observe love on a day marked on the calendar – I try not to think of it that way.

We all need a gentle reminder to not take the ones we love for granted, and be sure to show them a little extra affection on days like Valentine’s Day.
Ingredients for Valentine Surprise Sugar Cookie Stacks
Cookies::
- Pillsbury Sugar Cookie Dough
- Valentine Colored M&M Candies
Frosting::
- Butter
- Shortening
- Vanilla Extract
- Milk
- Salt
- Powdered Sugar
Decorating Accessories::
- Heart Shaped Cookie Cutter
- Round Cookie Cutter
- Assorted Food Colorings
- Red/Pink/White Assorted Sprinkles
- Piping Bags
- Coupler
- Cake Tip

Valentine Surprise Sugar Cookie Stacks

Description

Ingredients
Cookies::
- 2 Packages Pillsbury Sugar Cookie Dough
- 1 cup Valentine Colored M&M Candies
Frosting::
- 1/2 cup Butter, room temperature
- 1/2 cup Shortening
- 1 tsp Vanilla Extract
- 5–6 tsp Milk
- Pinch Salt
- 4 cups Powdered Sugar, sifted
Decorating Accessories::
- 1 − 3″ Heart Shaped Cookie Cutter
- 1 − 1″ Round Cookie Cutter
- Assorted Food Colorings – Pink, Red, etc
- 1/4 cup Red/Pink/White Assorted Sprinkles
- Piping Bags
- Coupler
- Cake Tip 1 or 3, 12
Instructions
For Cookies::
- Pre-heat oven, slice cookies and place on prepared baking sheet. Bake according to package directions. Remove cookies from sheet.
- Cut a 1-inch hole out of every other sugar cookie using the 1-inch round cookie cutter, while still warm. Remove center and set cookies aside to finish cooling. Discard (or eat) the center cut out of the rest of the cookies.
For Frosting::
- In stand mixer or with hand mixer in a large bowl, beat together the butter and shortening until smooth and combined. Add in vanilla extract, pinch of salt and 5 teaspoons of milk.
- Slowly mix in powdered sugar and beat until combined and smooth. If the frosting is too thick, add in additional teaspoon of milk so that is a spreadable consistency.
- Divide the frosting into small bowls and tint in desired colors. *Note* If the frosting doesn’t immediately turn the desired color after repeated attempts to darken the frosting, let it rest and it will darken as it sets. Place into separate piping bags.
To Assemble ::
- For the bottom cookie, use a whole cookie. Pipe around the outer edge of the cookie and top with a cookie ring. Repeat the piping process with another cookie ring.
- With two cookie rings attached to a bottom cookie, fill the center well with M&M’s. Pipe a frosting ring around the edge of one full-cookie and place on top to cover the M&M wells.
- Frost the top cookie as desired. Dip frosting side down into sprinkles, then top onto cookie stack to complete. Serve immediately.

I am SO with you! The other night, I was putting Camille to bed, and I heard Brian unloading and cleaning the kitchen after dinner. I fell in love with him all over again! hehe

Made these today and turned out perfect! I cheated a bit and bought Wilton cookie icing in a squeeze bottle to use for the piping on the edges-used my own frosting recipe for the tops.
I was able to make 6 complete cookie stacks from one pkg of Pillsbury refrigerated sugar cookie dough! I broke up the tube of dough into a bowl and kneaded in 1/4 cup of flour to make them less sticky for rolling. And I added red, pink, and white sprinkles to the M&M’s because who doesn’t like a sprinkle surprise in their cookie! ❤️❤️
