Roasted Chocolate Almond Butter

Calling the New Years Resolutions “resolutions” is hard, they always seem to set you up for failure. I will not have that post-lunch chocolate. I will not spend my Saturday making another batch of doughnuts. How negative! And how flavorless! I want to make the year about possibilities. Also, do we notice a trend of the things I will not do? They revolve around food. I’m like a labrador. MAPLEBACON?! It’s redic. Anyway, I want to make this year about possibilities. The ‘yeses’, the ‘you bet ya’s’ and the ‘you can do it’s’!
My first goal of the new year is the expansion of making my own food. A house filled with freshly baked bread is like ambrosia. Making your own ice cream is just exhilarating – mostly because you can eat it straight from the maker. And wielding your own power in the kitchen is just utterly satisfying. It’s like a maniacal cartoon evil genius kind of power feeling. Well.. really more a Gru evil-genius-with-a-heart-of-gold power feeling. I’m a sap, why lie?

As a notorious clock watcher – I count the minutes until my next meal or snack. 5:30 is breakfast, 9 is my snack, noon is lunch, three is another snack and then dinner. And of course, there are a couple of handfuls of gummy bears (again food obsessed). For the longest time my 9 am snack consisted of an apple slathered with non-portioned controlled waved of sinfully flavored almond butter. Then the obsession turned into eating straight out of the jar with a spoon. When I reached the bottom of the jar and realized what I’d done I had a moment of epiphany… I could make this myself. So I did.
And I’m back at it. Eating it with a spoon. The toast is just a ruse so you don’t think I’m absolutely bonkers.
But this recipe is bonkers easy.

Roasted Chocolate Almond Butter
- Prep Time: 15 minutes
- Cook Time: 5 minutes
- Total Time: 20 minutes

Description
This recipe is incredibly simple. It’s delicious on apple slices or toast, and you might even find yourself eating it straight out of the jar with a spoon!
Ingredients
- 12 ounces Roasted Almonds – unsalted
- ½ tsp Salt
- 2–3 Tbsp Peanut Oil
- ½ cup Semi-Sweet Chocolate Chips
Instructions
- Heat oven to 350 degrees. If using raw almonds – line a baking sheet with almonds and roast almonds for 12-15 minutes or until lightly browned. Remove from oven and allow to cool. If using pre-roasted almonds move onto the next step.
- In a high-power blender, or food processor, add in roasted almonds and sprinkle with salt. Turn on blender and pour in 2 Tablespoons peanut oil. Scrape down the sides of the blender or food processor as necessary.
- Once nearly smooth, add in chocolate chips and continue to process until smooth. It won’t be “PB out of the jar smooth”, but as smooth as possible. If the butter is still very thick, use additional tablespoon of oil to loosen the butter.
- Store in an airtight container and devour.

You are not alone with food obsessions! I’ve never told anyone this, but I eat grated parmesan cheese out of the container with a spoon! How weird is that?!?!? Don’t judge! I’m with you on the new years resolutions. I’m tired of denying myself things the start of each year. It leads me to failure. My goals are similar to yours in that I want to make homemade everything. Plus I want to put waaaay more effort into making the holidays really special. I think the new PW cookbook will help with that. Excited to try the almond butter! I love it so much more than peanut butter!

I am just like you on thinking about food. I’m sitting there eating breakfast thinking what I will have for lunch or a snack. This is definitely going to get made in our house.
I often think about what my next meal will be…during a meal. I get it! I like the resolution. I want to try that too. Homemade bread is high on my list of priorities of foods to make at home. Maybe I can make some bread and then use this chocolate almond butter!

Oh Megan, we are Sisters from another Mother. I make bread like I own a bakery. I love it. I make puff pastry and my own croissants. So when you are talking about this I am right up there with you. I make pecan butter and it is pretty good. I just figured peanut butter, apple butter, almond butter and why can’t I make it from pecans so I most certainly did because I love pecans. I have a jar (small,maybe) that I put pecans in and then pour honey over it and that I eat right out of the jar and put it on everything in the house. I started that many years ago because they use to have only walnuts in syrup and that is the one nut I am not fond of and don’t use. I had to shell so many when I was young and I just grew to hate them along with the greenish black fingers that goes with it. While I was still nursing I always had a bag of gummy bears in my jacket pocket. It didn’t help that in the restaurant at the hospital they sold them bulk, pretty pricey but you run out you will pay that ridiculous amount. My grandchildren sent me about 2 pounds of gummy bears from Texas. I called my daughter and said why are you sending me these? She said, we were at the grocery and Cierra said Mommy we got to buy Nana some gummy bears she may not have any so each of the kids had to get a scoop of them. We laughed so much about that. Anytime I went out there I always had them with me. Are you wishing you had not asked right about now. Sorry, just made me think of all that. Have a great day!
I don’t normally eat peanut butter/almond butter straight from the jar, but this, this I would — in a heartbeat. I have a super gross addiction to butter,like regular butter, sometimes I’ll just mix it with a little bit of sugar, and eat it as is…. so gross.
I love almond butter but hardly ever bother making it home – you’ve definitely inspired me to give it a go!
