Let’s be real, the days are getting longer, but that means I am cramming even more into them now than I was. How about you? My mornings start at 4am, so that I have time to wake up, walk the dog, take a shower, get ready for work, BLOG, try to eat something before I go, and kiss Ben if he is home. There really isn’t much time to enjoy the mornings, and this is all so I can make it to work by 7. *side note* Dear Lawd, help us when little toddling k-words enter the picture!!

So I need breakfast. I always have been a breakfast eater. It used to be bagels, cream cheese and turkey – back when I was in high school and was running 5 miles a day and had volleyball practice. Now, I need to be a little more sensible. But still need something fast. Enter overnight oats! And these patriotic ones at that! These red white and blueberry overnight oats have fresh fruit, shredded coconut, a touch of white chocolate – just because – and blueberries for days! I can run out the door on time now.
And let’s not forget the other thing I now have to fit into my busy work days – watching Game of Thrones that day AFTER it airs!! What kinda crap is this?!
Well, as part of that whole Ben-working-nights BS we keep running up against, he works every Sunday night. It’s not typically problematic… except when GoT is on and I promise him that I will wait until Monday to watch it with him.

I just want everyone to appreciate how giving I am. Because now I have to avoid the internet for a full day – which as a food blogger IS BASICALLY IMPOSSIBLE!!
I tried to think of ways to watch it, without telling him, but my poker face is a total joke. And if somehow I actually managed to watch it, I’m sure my Apple TV would give me away with its “resume playing” note, if I don’t manage to watch it all the way through the credits – because that’s just the kind of jerk the Apple TV is. It doesn’t lie for you at all!! C’mon Apple, help a desperate girl out!

So t-minus 13 hours until I get to catch up on last night’s episode – send prayers and good wishes, because I am going to be fighting the good fight today to not spoil it. Feel free to laugh, because this struggle is indeed – REAL.
Thank goodness this breakfast isn’t a struggle. Whip up a few of these to pack and take out the door! Create layers of fresh red raspberries and blueberries in the mix, toss on a little shredded coconut, and hearty rolled oats for a protein packed breakfast.

Description
Red, White and Blueberry Overnight Oats will hurry your mornings along in a colorful and healthy way – with red raspberries, coconut, and blueberries!
Ingredients
- 1 Small Container (6 oz) Greek Yogurt of choice – I used Red Raspberry and Blueberry
- 2 Tbsp Shredded Coconut
- 1/2 cup Red Raspberries
- 1/2 cup Blueberries
- 1/4 cup White Chocolate Chips, optional
- 1/2 cup Rolled or Old Fashioned Oats
- 2/3 cup Milk
- 2 Tbsp Sliced Almonds
Instructions
- In a mixing bowl, whisk together yogurt, milk, and rolled oats. Pour 1/4 of the mixture into one of the mason jars.
- Add in blueberries, or raspberries. Top with some shredded coconut. Add in another 1/4 of the yogurt/oat mixture. Seal the jar and place in fridge.
- Repeat with remaining yogurt in other mason jar. Seal and place in fridge.
- Let oats sit for 4-8 hours in the fridge. Serve chilled.
I totally missed GoT last night and I’m now scared to go on Facebook. I really shouldn’t even be on the computer. I should just curl up under the covers and refrain from any contact with anyone until I can catch up on the episode.
But I am on the computer, and I’m so glad I am because I got to see your beautiful breakfast creation!

Don’t worry, if you ever do have k***, your routine won’t change tooooo much 🙂 I just sneak the dog walk in while she is at school now! However, these oats would make my life even easier! No more stressing over breakfast for me!

Also k*** seem like more work and chaos before you have them. But somehow, you manage to squeeze it all in. Probably because our bodies get used to sleep deprivation. :/ :/ breakfast like this will def help!
