One of my favorite signs of spring is back! I know the birds are chirping, and I love that sound popping up as I walk the dog at the crack of dawn every morning – but it’s the crack of the baseball bat that really gets me excited! I spent so many springs and summers in my childhood going to softball and fastpitch practices, games and tournaments, that the smell of the dewy grass and dirt became synonymous with season. And this weekend we’re kicking off the first home game of the pro baseball season in Seattle… let’s go Mariners! AND SNACKS! Chips and fresh pineapple black bean salsa is my favorite.
It’s like everything is right in our world, a true sign that we are done with winter and moving on to sunny days ahead!

On the rare evenings that Ben and I are together, we walk by the ball fields near our place, and we can count on local beer league or softball games going on. We usually slow down our pace, or sit and watch for a couple of innings. Huck likes barking at the other dogs hanging out, and we like just relaxing and watching the games. I remember how much I loved playing, not that I was ever particularly great, but it was still the highlight of so many teenage memories for me. And it always makes me smile how it brings so families and friends together. Have you ever seen the look on a 15 year old girls’ face when she hits a homerun? She can conquer the world!

But whether you are watching the armchair outfielders, or the fast pitch queens, or the big leaguers at bat – spring is here and the crack of the bat is as sure of sign of spring as the chirp of the birds!
The most natural pairing for spring to baseball is snacking and beer. We do everything from tortilla chips and salsas to meats on the grill. With the light and airy spring peeking out, I whipped up a big batch of this pineapple black bean salsa to get ready for our opening day of baseball season.

Description

Ingredients
- 1 can (15 oz) Black Beans, rinsed and drained
- 1 Whole Pineapple, diced finely
- 1 Lime, juiced
- 1/3 cup Cilantro, minced
- 1 large Shallot, minced
- 1 tsp Fresh Ginger
- 1/2 tsp Salt
- 1/2 tsp Pepper
- 1/2 tsp Cumin
- 1 bag Food Should Taste Good Jalapeño Tortilla Chips, for Serving
Instructions
- Drain and rinse black beans. Place in a large bowl. Add in finely diced pineapple.
- Chop cilantro, shallots, and ginger, and add to bowl. Juice lime and pour over the top.
- Add in salt, pepper, and cumin. Toss to combine.
- Let rest for one hour in the fridge to chill. Serve with Food Should Taste Good Jalapeño Tortilla Chips.
