Oh, hi! Fancy seeing you around here! I know, it’s been quite a while. But I have three very good explanations for it.

But despite my reasons for the radio silence, I have missed you terribly. Things have been ever so busy around here. There is that cookbook. It’s three weeks away from going to the publisher – so I’m panicking extra hard. No matter my best intentions, writing for deadlines – especially ones like this – always feels like I’m back in college writing my term paper the night before it’s due. No matter how much time you have, this feeling and panic always surfaces.

So, with that looming – I thought it would be a great time to take a two week vacation to the UK and Iceland. Say, WHHAAA?! 

Ben and I just got home from two weeks away. It was a trip that was planned well before the cookbook ever came to be, so there was really no moving it. And it came right at the right time in my real job where EVERYTHINGISHAPPENINGNOWOMG.

So today I go back to work, for the first time in two and a half weeks. For the most part, separating myself from work was easy… being half way around the world will do that to you, but knowing that I am going back to 316 emails this morning (I checked last night) made me add a new level of stress to the already overbrimming cavalcade of pressing matters we are dealing with. Frankly, I’m impressed that there are only 316 emails. But their contents will determine my final feelings on this. 

Was that three things? I think so. Between the jetlag that simply won’t go away and the daylight savings time, I’m wide awake at an ungodly hour and can’t be counted on to count to three let alone make excuses for my absence. The thing is, THANK YOU. Despite my being away, you are never far from my thoughts and I am so excited to be able to share with you all the projects we have been working on in the near future. Soon, we will be deep in the throws of the holidays and I am determined to help you make them special.

Now, down to business! Marinated goat cheese. Where has this been all our lives?!

Growing up, and still to this day, I have been a homemade food gift giver. In highschool, it was homemade Frango mints at Christmas – a recipe I really should share with you if I can dig it up – and cookies galore. The trend still continues to this day. Butterscotch Hot Cocoa Mix anyone? Brandied Fruit Cake? These are staples in the holiday gift giving rotation, and I know this one will be, too.

Marinated feta is a big deal, but I thought goat cheese would be a new twist. And any excuse to eat goat cheese is fine by me. The beauty of this is that you can use whatever herbs, seasonings, or sauces you want. In the jars I have peppercorns, rosemary, lemon thyme, garlic, and even sliced roasted red pepper. You can add jalapeno, harissa, chipotle, or cranberries!

For the oil, I used extra virgin olive oil. You can use extra light olive oil if the darker nature of the extra virgin olive oil is too much for you. Then, just seal it and store it in the fridge until you are ready for gifting. This will be a perfect accompaniment to a holiday cheese plate!

This marinated goat cheese is a perfect holiday gift for your favorite food loving friends. Use any spices you choose, and make things fun. 


  • 1 pound plain Goat Cheese, do not use pre-made goat cheese crumbles. Log preferable.
  • Extra Virgin, or Extra Light Olive Oil
  • Roasted Red Pepper
  • Peppercorns
  • Fresh Rosemary
  • Fresh Thyme
  • Garlic Cloves
  • Other herbs or fillings


  1. Into your clean mason jars, layer goat cheese that has been sliced or crumbled into LARGE crumbles or slices.
  2. Between layers, add in your fillings, like roasted red pepper, peppercorns, rosemary and thyme.
  3. Pour the olive oil over the top of the cheese, filling up the jar and completely covering the goat cheese.
  4. Seal with lid and store in fridge until ready to use or give as a gift. Perfect for eating, or using on a holiday cheese plate.
  5. Use olive oil in other cooking as it has melded with new flavors.
