Ginger Orange Jellied Cranberry Sauce

I’ve found the au-natural, magic cure for insomnia – baby snuggles. It’s been a rough week for the sleepless here in Seattle, and I don’t know about you, but this whole day light savings time thing has left me a complete wackadoo. I start each day with cautious, exhausted, optimism that it I will not be awkward today and the first time someone says “Hey!”, I blurt out “Good, thanks!”. Wait… Awkward, hits a line drive right down the third base line, rounds the bag, and makes it a double!

I’ve really got to work on this. But no more, people. Can I get a hallelujah! This cure to my insomnia is here, so listen up. One hour of intense baby cuddling, enough to get your hormones rattling, and oxytocin peaked, and then cool down by placing your head on the pillow and freshly washed sheets for a good solid 11 hours sleep. I woke up a whole new woman. Plus a few additional hormones floating around. Lucky, Ben.
Ingredients for Jellied Cranberry Sauce
It’s oh so simple and making this homemade jellied cranberry sauce with a ginger orange twist includes just the addition of a couple more ingredients that are easy to find.
- Fresh or Frozen Whole Cranberries
- Navel Oranges
- Sugar
- Fresh Ginger Root
- Vanilla
- Salt
With my best friend’s baby officially one week old, I’ve had three chances for cuddles, and Friday was as day that squishy baby dreams are made of. Ben, decided to take a nap before our typical night of Gold Rush watching started, so after baby cuddling, I went into wake him up at 6:30, only then to wake up four hours later somehow falling asleep myself. How did that even happen?!

Somehow, I fell right back to sleep – so much for date night – and at 5:30 the next morning, One hour of cuddling a squishy, one week old baby who has already mastered her one-eyebrow raised game, left me so blissed out, even day light savings time couldn’t rouse me at 3 am.
My tiny girlfran’s bliss game is strong. And my hormones are killing me. Welcome to Baby Fever, population me.

But now that my sleep cycle is back on track, I can finally start focusing on Thanksgiving. Well, focusing on it as much as I can because it’s a week away and I’m panicking. I’m firmly in Camp Jellied Cranberry Sauce, because I love, to an unhealthy degree, the ringed cranberry cylinder that comes from a can. Except for the fact that it comes from a can and you (Yes, YOU!) can make this so much better at home with a saucepan and one blender. Try it. I mean it. And be prepared to be wowed!

Ginger Orange Jellied Cranberry Sauce

Description
Kick the cranberry sauce can to the curb and make your own ginger orange jellied cranberry sauce in one pan and a blender!
Ingredients
- 1 pound Fresh Cranberries
- 2 Oranges
- 1 1/2 cups Sugar
- 1 1/2 tsp Freshly Grated Ginger
- 1/2 tsp Vanilla
- Pinch Salt
Instructions
- Place the cranberries into a large saucepan. Using a vegetable peeler, peel oranges and place zest into the saucepan. Then squeeze the juice from both oranges. Stir in the sugar, ginger, and pinch of salt.
- Bring the mixture to to a simmer, and cook, stirring occasionally for 15 to 20 minutes.
- Remove the mixture from the heat, gently removing the orange pith from the mixture. Stir in the vanilla.
- Pour the mixture into a blender, and blend until smooth. Pour through a mesh sieve and into a serving bowl.
- Cover with plastic wrap and place in fridge until ready to serve.
- Garnish with additional cranberries, and segmented oranges, optional.
