All of those classic flavors jam packed in toasty bread – this fig rosemary roast chicken Brie panini is one for the ages!! And OMG the CHEESE!!

There is a lot of baking going on right now – and it’s not just the carbs – it’s the baby kind. This particular baby is going to be clad in neon, covered in sparkles and totally sprinkled the heck out. That is if this new worldly addition is anything like their mama! Jess of How Sweet Eats is baking the ultimate bun, and OMG (In True Jess Style), we are trashing up food all over the internet in her honor!
Ayyy ohhh!!

Ask any food blogger who their (not-so) secret food blog crush is, and Jess is invariably at the top of the list. Most obvious statement ever, right? She loves neon, trashy food, even trashier TV, and is basically over the TOPPP on everything, and now we are taking a page out of the Jess play book with an over the top baby shower from all the invisible internet people she calls friends. Lucky her?
We are a touched, special, and questionable (at times) group, but for some reason she still calls us friends. Today we are taking a hot second to celebrate her – with food. Surprise! No? Not shocking at all? Didn’t think so.

But trying to out do the woman who outdoes everything in the most insanely, incredible way – is like, nearly impossible.
Challenge, accepted!
Jess, we (collectively speaking for all of us obviously) are over the neon moon for you and Eddie. I can’t wait to see this new adventure unfold – every wittle itty bitty scrumptious baby roll instatweet of it.
Oh gawd, my ovaries just s’ploded again. Damn.

Description
All of those classic flavors jam packed in toasty bread – this fig rosemary roast chicken Brie panini is one for the ages!! And OMG the CHEESE!!
Ingredients
- 4 slices Sourdough
- 4 ounces Brie, sliced
- 1/2 cup Fig Preserves
- 1/4 cup Dijonaise
- 1/4 cup Balsamic Glaze
- 1/2 pound Fig Roast Chicken, shredded
- Roasted Brussels Sprouts, shredded
- 4 Tbsp Butter, softened
Instructions
- Preheat a panini press, or skillet over medium high heat.
- Butter one side of each slice of sourdough bread. On the other side, spread the dijonaise, fig preserves, and drizzle with balsamic glaze. Add on top shredded roast chicken. Top with Brie cheese and brussels sprouts. Top with other slice of bread.
- Press in panini or fry like a grilled cheese until the bread is toasted and the cheese is melted. Devour immediately.
Those figs!! That chicken!! The Brussels!! Stop it. I can’t handle it.
