Raise your hand if you’re done Christmas shopping. No? Raise your hand if you’re not even sure what you want for Christmas yourself, let alone what you’re buying for your significant other. Guilty!! But I sure do keep finding everything I need for myself – like the stuff I didn’t even know I wanted! Somehow in the last two days, I have ended up with a new iPad, thrown in for practically free when I upgraded my new phone, and then a new desk, chair, and cutsie desk things for my “office”. Because I’m adulting all over the place. Now what is Ben supposed to get me? Or what am I supposed to get him?
The struggle for Christmas giving is most definitely real. Do you have any ideas?? Tell them to me, I beg you!! At this point, new underwear is most definitely an option I am considering just for something to wrap.

Ben and I are terrible at giving gifts to one another, but I think for the most part it’s a sign of being an adult – when we want or need something we have the luxury of just going out and picking it up right away, not needing to wait for a holiday to do it. Well, I should say *I* do it, Ben will resist the urge to spend a dollar on anything absolutely non-essential to his existence. I wish I had that problem.
Me buying a desk, chair, clock, lamp, and somehow ending up with a new iPad in the last two days have all but put him in a catatonic state. But I do maintain that I scored on the desk deal – I had a 25% off coupon! See, saving dollars and dimes all over the place. Boom.
I just won’t mention the new computer I have had my eye on…

And that streusel though. A thing of beauty. I have been eyeing my friend Rachel’s Pumpkin Streusel Muffins for ages – because, Pumpkin – and used her streusel topping on this double chocolate chip gingerbread streusel pound cake, and it was magical. Just look at it.

Ingredients
Double Chocolate Gingerbread Pound Cake::
- 1 1/2 cup Flour
- 1/2 cup Cocoa Powder
- 1 tsp Baking Powder
- 1 tsp Salt
- 1 cup Sugar
- 3 Tbsp Crystallized Ginger
- 1 tsp Ground Ginger
- 2 Tbsp Molasses
- 4 Eggs
- 2 tsp Vanilla
- 2 cups Unsalted Butter, room temperature
- 3/4 cup Chocolate Chips
Streusel Topping::
- 2 Tbsp Sugar
- 2 Tbsp Brown Sugar
- 1/2 tsp Cinnamon
- 3/4 cup Flour
- 1/4 cup Butter, melted
Instructions
- Preheat oven to 350 degrees.
- In a small food processor, add in sugar, crystallized ginger, and powdered ginger. Pulse until the crystallized ginger is completely combined with the sugar and smooth. Set aside.
- In a mixing bowl, whisk together flour, cocoa powder, salt, and baking powder. Set aside.
- In the mixer, beat butter until smooth. Add in ginger infused sugar, and beat until light and fluffy.
- Add in one egg at a time, mixing thoroughly between additions of each egg. Add in vanilla, and molasses, and mix to combine. Scrape bowl as needed to ensure even mixing.
- With mixer on low, add in flour in three separate additions, mixing until just combined. Add in chocolate chips and mix until just combined. Do not over mix.
- Pour into a greased loaf pan and smooth the top.
- In a small bowl, mix together the ingredients for the streusel topping. Use your fingers if necessary to create large crumbles. Sprinkle over the top of the pound cake.
- Bake on center rack for 60-70 minutes, or until a toothpick inserted near the center comes out clean. Cool cake on wire rack for 10-15 minutes.
- Run a knife along the edge of the pan, and remove the pound cake from the pan to cool on a wire rack. Allow to cool completely before slicing and serving.

Gorgeous holiday treat! And I am definitely struggling with the Christmas shopping this year. We have had so much on the calendar, can’t even find a day for our family to do our annual shop and lunch time. I’ve been doing quite a bit online, but it’s not the same. (I wish I had some great ideas for my husband, too!)

Confession…I started shopping back in August! I knew with a babe coming end of October my shopping time woudl be limited these weeks before. But I still have gifts to buy because I have taken a little hiatus…so don’t feel bad! I am always finishing up at the list minute! And this bread? I will just continue that hiatus and snack on this gorgeous bread!

As for gift giving, Stevie and I are awful. I always just buy what I want when I feel the need. He does too…. there isn’t much I could even buy him for a xmas gift… so we rarely buy for each other anymore. Occasionally if we think of something great, we’ll do something. But it’s never an equal gift giving scene….. him buying me a new lens, or a gift card for a tattoo…. me giving him nothing but a hug.
