Time is becoming even harder to come by. It’s true. It doesn’t matter if it’s you working more hours at work, your husband working nights like mine does, or running all the errands and never seeming to get any down time. Do you remember the last time you had time for the gym? Me neither.

One of my and Ben’s goals for this year was to be more proactive about meal planning, so we could have something fresh and healthy for dinner without me scrambling while he’s trying to get ready and out the door for work. Some days are better than others in the meal planning department, but really, I still need all the help I can get. This last week we were able to give Blue Apron a try. I’ve been hearing about it from my coworkers who loved it. I waffled, thinking of all the things that would stop me, from “Is it too expensive?”, to “are these meals really that good?!”. Well, no it’s not too expensive, and the meals really are THAT GOOD!

Blue Apron uses farm fresh ingredients, that are perfectly portioned, so I don’t have a lot of miscellaneous extras hanging out. And for meals that are built for two people, they are not skimping on the portion sizes either!

I had Ben go grab our Blue Apron box from the office one night I was working late, and he put it all away, I came home to a fridge full of three meals, that were still chilled in their handy refrigerated box. I had no worries that things would spoil in transit. And then, it was time to look over the recipes that I picked out. The miso glazed chicken wings were top of my list.

I fixed these miso glazed chicken wings for my best friend and I on a relaxing Saturday for lunch. It was so nice that the whole meal was done in less than 40 minutes, and was packed with flavors that just came together beautifully. the rice and zucchini salad was filling, and the chicken wings were absolutely cravable. I’m never going out for chicken wings again.

It took the guess work out of the cooking process, so whether you’re a beginning cook, or a food blogger like me, it builds that confidence in the kitchen and you end up with a hearty meal that you made yourself.

I can’t wait to see what we will pick out from the rotating selection of recipes next week! Stay tuned.
