I’ve been having cravings lately….for pizza. No no, I’m not preggo. Scared ya though, didn’t I? Well, last week during Ms. Kandace and my weekly dinner date she surprised me with a wonderful new creation of a doughy south western-y avocado topped piece of heaven on a plate. It was simple, quick, and any a wonder that this had never crossed my plate before!

The ingredients were simple enough, being things you probably already have in your kitchen!
For your grocery list you will need,
~ 1 cup frozen corn,
1 can black beans, drained and rinsed
~ 2 whole tomatoes, diced small
~ 1 avocado, diced into small pieces
~ 1/2 tsp cumin
~ 1/2 tsp chili powder
~ 1 cup, cheese of choice shredded
~ 2 cans Pilsbury Pizza Dough
If you’re feeling the need to go homemade, I’ve become a huge fan of Ms. Ree’s Pizza Dough recipe from her Pioneer Woman website. What is there that this woman can’t do?
After mashing both packages of dough together, Kandace began working the dough into the proper pizza shape and mixed up all the goods a separate bowl.
The smell and colors were just divine, spicy and lively.
And it only gets better when you add in all the vegg to it too! Oh, I die.
The colors, the smells, and a glass of wine to top it off with plenty of girly talking time like a couple of fish wives, splendid evening, as per us.
And the finished product.
There was so much extra topping left over form this pizza, Kandace so lovingly packed me a doggie bag of toppings for me. And heck, the toppings were so good all on their own! If you are ever in need of a healthy protein and fiber filled snack, the toppings for this pizza alone are amazing.
This will be a new standard in my apartment. And hopefully in yours as well.
