The last week has been a trying one for the family – and everyone has suffered. Especially the dog.

He’s in a cone of shame. My bank account has suffered too, but at least I get the airline miles out of this triple threat trip to the vet last week. Really, Huck is fine. It’s just part of the routine costs of keeping the broken animal, but this cone business is getting us all down.

That is when I’m not laughing at the ridiculousness of it all. Gold Star Future Parent right here!! So we needed Dutch Chocolate Walnut Frosted Brownies.

It really was a routine visit to the vet. A doggie dental, aspirating a lump on his chest, and removing a cyst from his eye. But one stoned dog later, nearly $800, a cone of shame, and enough pills to make me look like a pusher, and the crashing sound at every turn with a dog who has absolutely no spacial awareness – we’re ready for this cone to come off.

The trash has been knocked off, walls run in, I’ve been taken out at the knees by him zooming by to get his breakfast, and parked cars have been run into.

The only good thing about this cone is perhaps that he figured out he can “snowplow” the three inches of snow we got last night right into his face when we were out for our walk this morning. No need to go get the snow himself, he figured out he can make the snow come to him! He was thrilled.

With all the haphazard messes from this last week – I really am glad the dog is healthy-ish. And that I got dutch chocolate walnut frosted brownies.

Let’s not get carried away and give him a clean bill of health… He’s still allergic to everything under the sun, including himself. His hip dysplasia is still alive and well, and he’s in the cone of shame for another four days.

But what we would do without this kid is beyond us. And incase any one is really worried about how hard his life is with this cone one… I can assure you, the one thing he can still do is make it all the way up onto the bed himself. So don’t feel TOO bad for him.

There was one other person who was lamenting the last week, too. It was Ben, for nary the reason that I made a batch of cookies and took them all into work leaving him with only a half dozen to himself. So I made him brownies yesterday. It’s not often I have a craving for nut loaded brownies, but this weekend I sure did. I topped them off with a really delicious and EASY, whipped chocolate frosting and sprinkled a little powdered sugar over them for kicks. The dutch chocolate makes them super rich, you will love them.

Dutch Chocolate Walnut Frosted Brownies

Units Scale


  • 1 1/2 cup Sugar
  • 1 cup Unsalted Butter, softened
  • 4 Eggs
  • 2 tsp Vanilla Extract
  • 1 cup flour
  • 1 cup Dutch Processed Unsweetened Cocoa
  • 3/4 tsp Baking Powder
  • 1/2 tsp Salt
  • 1 cup Walnuts, chopped


  • 1 cup Powdered Sugar
  • 1/3 cup Dutch Processed Unsweetened Cocoa Powder
  • 2 Tbsp Milk
  • 4 Tbsp Unsalted Butter, softened
  • Pinch of Salt



  1. Preheat oven to 350 degrees (180C). Spray a 13×9-inch baking dish with nonstick spray. Line the baking pan with parchment paper and spray the paper lightly again.
  2. In a bowl, beat together the butter and sugar until light and fluffy. Scrape down the sides to ensure it is all evenly whipped.
  3. Beat in one egg at a time into the creamed butter and sugar, scraping down the bowl as necessary. Beat in the vanilla extract. Beat mixture until light and fluffy.
  4. In a separate bowl, whisk together the flour, cocoa, baking powder, and salt until combined. Slowly add into the whipped butter mixture until just combined. Lastly, stir in the chopped walnuts.
  5. Spread the batter into the prepared pan. Bake on the middle rack, for approximately 25-30 minutes until a toothpick inserted in the middle comes out clean. Allow the brownies to cool completely.


  1. In a bowl, beat the butter until smooth. Beat in the powdered sugar, cocoa powder, and milk until the frosting is smooth. Scrape down the bowl as needed until the frosting is smooth, and fluffy.
  2. Spread evenly over the brownies. Slice and serve.
