These Crispy Chicken Thighs will wow even the most picky of eaters! They are crispy on top and absolutely divine and moist inside. Make these in under 30 minutes for dinner tonight!

People show their love in so many different ways. I’m a classic case of baking or feeding those that I love. It’s the only thing that has saved my waistline, but it does more for my heart to feed my friends and my family good food and delicious treats. A few weeks ago I was able to take part in a very special event hosted by King Arthur Flour to bake and cook for a good cause. When we do things for others, it’s more than a action, it’s a piece of ourselves invested in that time and that food, and its a hope to bring smiles to other people’s faces. But in the end that simple action brings more back to ourselves and fills out heart ten fold.


During the two day event with King Arthur Flour, we did more than learn about proper techniques for baking bread, or learning the secrets to the perfect pie crust, we got to delve into what Baking for Good is about on a whole and even better, a personal level.

Baking is a fundamental part of who I am. I find it calming, centering, and gratifying, captured perfectly when someone else is enjoying what I took the time to make for them. Part of the Bake for Good mission is to perform a baking act of kindness to those in your community. Finding a way to light up others day through baking, or cooking if that is more your speed, can have a profound impact on those around you.
As our act of kindness, the team at King Arthur Flour and our blogger team were able to provide dinner and dessert – from those perfectly crusted pies we learned about – to a local women and children’s shelter in Seattle. For the dinner portion of our evening Jenny and I tackled the chicken of the night, this chicken right here.

Providing a home cooked meal to women and their children who want a piece of home, meant sharing what I love the most and hoping to meet them at that intersection of home and love. I’m so pleased to have been apart of this community event with King Arthur Flour and hope that you too will find a way to bring a piece of your self and a piece of your hearth to your own community.

And if the shy, wonderful, soul explodingly sweet kids at the shelter were any testament – coming back for seconds and thirds – of this chicken alone, you know it is a sure winner and one that is meant to be shared in your own home.

Crispy Chicken Thighs

Description
These Crispy Chicken Thighs will wow even the most picky of eaters! They are crispy on top and absolutely divine and moist inside. Make these in under 30 minutes for dinner tonight!
Ingredients
- 1 package Chicken Thighs (usually packages of three – this recipe can be doubled or more!)
- 1 1/2 tsp Salt
- 1 tsp Pepper
- 1/4 tsp Garlic Powder
- 1/2 tsp Lawry’s Seasoning or Chicken Seasoning Blend
- 2–3 Tbsp Olive Oil
- 3/4 cup Chicken Broth
- Aluminum Foil
Instructions
- Remove chicken from the fridge at least 20 minutes before cooking to let the chicken come up to temperature and take the chill off for even cooking.
- Preheat oven to 350 degrees.
- In an oven proof skillet (like cast iron or stainless steel), preheat olive oil in the pan over medium high heat on the stove. While the oil is heating, prepare chicken. Season all sides of the chicken thighs with seasoning.
- Place chicken, skin side down, into the pan in the oil. Cook chicken for several minutes until the chicken is dark golden brown and crispy – about 4 minutes. Using tongs, turn the chicken over and cook on the other side until dark golden brown.
- Pour the chicken stock into the bottom of the pan and carefully cover the pan with aluminum foil and place in the oven for 12-15 minutes until the internal temperature of the chicken reaches 160 degrees. Remove and let rest for 5 minutes before serving.
- Serve with roasted vegetables.
These chicken thighs look like the perfect weeknight dinner. And, I loved the pics from the time you spent baking for good. What a great cause!

Thank you for catching that – I have updated the recipe to include the chicken stock. Add the chicken stock right before you cover the skillet with foil and place it in the oven. Hope that helps and I hope it’s a BIG hit!
