Coming back from vacation is really hard, you get to this point of relaxation that it feels like there is no coming back from. Four days away from the office and I have to spring back into acton and head to an all day work shop today. Someone send prayers, coffee, and maybe a cattle prod because this is going to be a challenge.
What’s not going to be a challenge was devouring the remains of this apple strudel. It tastes just like my Czech grand mother’s but, it didn’t take me hours on end to make it. Hallelujah!

I’m all for those recipes that take forever, the ones that require that extra little bit of lovin’, but when I want strudel, especially one that reminds me of my grandma, I need it like OMGNOW. There is always something about strudel that is so quintessentially her. She always has something baked when I come over for a visit, whether it’s kolaches, strudel or cookies.
I like to think I inherited that gene from her and it is a lasting impression she has made on my life. And my jeans. Bless her.

20 Minute Cinnamon Twists with Cream Cheese Dipping Sauce




30 Minute Apple Strudel

Description
Feed the craving for traditional apple strudel without all the time! This 30 minute apple strudel will fill the craving in a hurry!
Ingredients
- 1 Sheet Puff Pastry, thawed
- 2 Apples, cored (Recommend Granny Smith or other Pie Apple)
- 1 Tbsp Cinnamon
- 1/4 cup Sugar
- 1/2 Lemon, juiced and zested
- 1/2 cup Golden Raisins
- 1 Egg
- 1/4 cup Powdered Sugar
Instructions
- Preheat oven to 400 degrees.
- Using a mandoline, thinly slice the apples into a large bowl. Cover sliced apples with cinnamon, sugar, lemon and golden raisins. Stir to make sure that all apples are evenly coated.
- Using a rolling pin, roll out the thawed pastry into a 11×17 inch rectangle on a floured surface. Pour the apples into the middle 1/3 of the puff pastry.
- Using a knife or pizza cutter, cut 1″ wide strips into the remaining edges of the puff pastry, moving from the sides of the puff pastry, towards the center where the apples are.
- Fold the edge at the puff pastry over the apples, and then taking one strip at a time, fold over the apples. Take one strip from one side, and one from the opposite, mimicking a braid. Once you reach the end of the braid, gently tuck any remaining bits of puff pastry into the braid.
- In a small dish, whisk egg with 1 Tablespoon of water. Brush the puff pastry with the egg wash.
- Place in the oven and bake for 30 minutes until the puff pastry is deep golden brown. If the pastry is browning too quickly, lightly tent with aluminum foil.
- Remove from oven and allow to cool on the baking sheet. Slice into 6 diagonal slices and sprinkle with powdered sugar. Serve warm with ice cream for an al a mode treat, or just devour.

Awe sweet food memories from your grandma…those are the best. I actually tried to make strudel once for my grandma, from scratch out of a german cookbook and it was a dEEE zaster! I think I’ll give yours a try next time!

You’ve totally read my mind–I’ve been craving some apple strudel BIG TIME. Totally in love with this 30-minute version of it. I need to make it for the party I’m going to this weekend!
That’s true that it can be hard to get back into the swing of things after a holiday. Having something delicious like this to help me wake up in the morning would be nice. If you’re looking forward to breakfast, it can make it easier. The fact that it’s so quick to make is an added bonus. Maybe I’ll give this recipe a try.
