Nutella Orange Linzer Cookies

There aren’t many opportunities for me to feel like a badass these days. Back in the “old days”, college, I used to be a competitive lumberjack. Pick your jaw up off the floor. It’s true! I loved it.

I did everything except burling (log rolling), and climbing, because I’m afraid of heights, and getting splinters on my thighs if I lost my footing. And falling. But everything else, you bet I was right there. Running with a chainsaw for Obstacle Pole, whipping a choker around logs and diving into the dirt, throwing axes, and breaking a log with swift cuts and a sense of accomplishment. I loved feeling strong, and powerful, tough, and badass. The blisters, splinters, aches, and pains were delicious in their own right, because they represented the work, sweat and tears of logs chopped, sawn and skills developed. They represented fun.

Unfortunately I had to give it up after continuous back injury that left me collapsing onto the floor. And at 21 that is the most defeating and embarrassing feeling you can have when your best friend and boyfriend have to pick you up off your bathroom floor. It was time to hang it up. But the memories of it bring me so much joy. And the friends made are lifers.

So this weekend we went Christmas tree hunting and went to a local farm recommended to me by a friend and coworker, who coincidentally we ran into there! We weren’t sure what we would find on our search, but we perused the nobles (my favorite), and didn’t find “the one”, but kept hunting, with Emmett touching every tree he could, smiling and fascinated by this new sensation. Last year he was only two months old and not really able to take in the season. This year, it’s a whole new ball game and I can’t wait to celebrate it with him as he drinks it all in.

Ben toted Emmett along the rows of trees, and left me with the saw. We found “the tree”, a grand fir, and I went to work. And so even if it was a mere  couple of minutes cutting down a tree, it made me feel the tingle of those old badass feelings again. I won’t be winning any single buck championships anytime soon, but throwing that tree over my shoulder like a caber in the old days just gave me that smile again.

The badass is in there somewhere. And from time to time she gets to shine. And then I look for some fun making this nutella orange linzer cookie recipe to get me more in the Christmas spirit. 

Ingredients to Make Nutella Orange Linzer Cookies

  • Flour
  • Almond Flour/Meal
  • Ground Cinnamon
  • Butter
  • Sugar
  • Navel Orange
  • Egg
  • Vanilla Extract
  • Nutella
  • Powdered Sugar

How to Make Nutella Orange Linzer Cookies

In a small bowl, whisk together the flour, almond flour and cinnamon. In a large mixing bowl, beat together softened butter and sugar until smooth, light, and fluffy. Beat in the orange zest, followed by the egg, and vanilla extract until completely incorporated.

Divide the dough into half. Shape each half of the dough into discs about 1″ thick. Wrap each disc in plastic wrap and place in the fridge for 2 hours to chill.

When it’s time to bake preheat oven to 350 degrees. Remove one disc of dough at a time, and roll out the dough to 1/8″ thick. Using Linzer cookie cutouts, cut out an even number of shapes of whole cookies, and cookie tops with decorative shape cut outs. If the dough is becoming warm, pace the cutouts onto a cookie sheet and place in the fridge for 10 minutes before baking.

Bake cookies for 10-11 minutes per batch, rotating the cookie sheet halfway through baking. Let the cookies rest on the cookie sheet for 2-3 minutes before removing them and placing them onto a cooling rack to cool completely.

Reroll any excess dough, and continue to cut out until all the dough is used.

When the cookie are cool spread 1/2 – 1 teaspoon of Nutella onto the whole non-cutout cookie. Before assembling sprinkle the top cutout cookie with powdered sugar. Then gently press the cookies together.
