First tip? Use Yukon gold potatoes. You may have seen oven fry recipes that call for soaking potatoes in cold water to remove the starch. This trick works, but here’s an even better one: by using Yukon gold potatoes, you can skip the soaking because they’re naturally lower in starch than Russet potatoes. Huzzah! 

Second tip? Dry the potatoes! This is self-explanatory—by soaking up any excess moisture on the potatoes, you’re going to get a crispier exterior.

And finally, the third tip: use plenty of oil and high heat. Don’t be afraid of the oil! You’ll coat your sheet pan with the oil and toss the fries with it, which ensures that the potatoes don’t stick and get a nice sear on both sides. 

What You’ll Need

This recipe is all about technique. Well, technique… and garlic and Parmesan. But at any rate, it’s not as much about the ingredients, but more about how you use them!

  • Yukon gold potatoes – If you substitute a different type of potato, they won’t be as crispy.
  • Canola or avocado oil

How to Make Garlic Parmesan Oven Fries

Are you ready for the best oven fries you’ve ever had?! Here’s what you’ll need to do.

Prepare. Preheat your oven to 450ºF. Coat a sheet pan with 1/4 cup of oil.

Cut the potatoes. Use a sharp chef’s knife to cut the potatoes into evenly-sized wedges (about 6 to 8 per potato). Use a paper towel to dry the wedges.

Season the potatoes. In a large mixing bowl, whisk 2 tablespoons of oil with salt, pepper, half of the parsley, and half of the garlic. Add the potatoes and toss to coat, then pour them onto the prepared pan and arrange them in a single layer.

Bake. Place the pan in the oven and roast the fries for 25 to 30 minutes, turning once or twice to ensure that all sides of the potatoes are browned and crisp.

Do You Have to Flip French Fries in the Oven?

Yes, flipping is key to getting fries perfectly crispy on both sides. Without this step, you’re likely to have over-done bottoms and under-done tops.

Ingredients

  • 2 pounds Large Yukon Gold potatoes, cut into even wedges
  • 1/4 cup + 2 Tablespoon Canola or Avocado Oil
  • 1/2 tsp pepper
  • 1/2 salt
  • ¼ tsp Paprika
  • 2 tablespoon parsley chopped
  • 1 tablespoon fresh garlic, minced
  • ¼ cup finely grated Parmesan Cheese

Instructions

  1. Preheat oven to 450.
  2. Cut potatoes into even wedges, of about 6-8 wedges per potato. Pat the wedges dry with paper towels. This will add to the crispy exterior.
  3. In bowl add 2 Tablespoon canola or avocado oil, salt, pepper, half of the chopped parsley, half of the minced garlic, and whisk together. Toss potatoes in mixture.
  4. On large nonstick rimmed baking pan, slather with remaining ¼ cup canola oil. Place potatoes on pan in single layer.
  5. Place in the oven and roast for 25 to 30 minutes, turning once or twice to ensure that all sides of the potatoes are evenly roasted and crispy.
  6. Remove and let sit on paper towels, allowing excess oil to drain away. Top with remaining minced garlic, parsley, and Parmesan cheese.  Serve and devour.
