Apple Baked Pork Chops and Stuffing
I’ve been going through my kitchen lately, trying to eat my way through all of the things I have. There have been cans of beans, soup, and stuffing that have been sitting there needing to be used. This is a recipe I came up with and it is wonderful when you’re in a bit of a time crunch. Three ingredients is all it takes and a spare 40 minutes in the oven.


Start with four pork chops, or if you’re like me and buy the super thick ones at Costco – use two and fillet them in half to make normal human-size consumable chops. Trim off any extraneous fat that you don’t want and place at the bottom of a 13×9 baking dish.

From the cupboard, snag a can of Apple Pie filling. They come in a pretty standard 16oz can, so you can’t screw it up. Open and dump over the pork chops.


And for that last step, also grab that box of Stove Top stuffing off the top shelf tucked away and neglected. Prepare according to box directions. When done and fluffed up – top the pork and apples with it.
That’s IT! Bake for 40 minutes in a 375 degree oven. 


 And as a side dish, I had a medium sized zucchini in the fridge, so I sliced him up like french fries, tossed in two Tablespoons of Olive Oil, added 1/4 teaspoon of Salt and 1/4 teaspoon of Pepper, 2 minced cloves of garlic and 1/4 cup of shredded parmesan cheese. Cover and bake right along side your Pork and Apples for 20 minutes – and voi la!! Zucchini cheese casserole.  It’s an all in one dinner, with a whopping total of five ingredients.  Give it a shot sometime, you won’t be dissapointed.

2-4 Pork Chops
1 16oz. can of Apple Pie Filling
1 box of Stove Top Stuffing
1 Zucchini
1/3 cup Parmesan Cheese
