Instructions
- Preheat oven to 400 degrees.
- In a mixing bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and sugar until evenly combined. Set aside.
- In a small bowl, whisk together wet ingredients – egg, vanilla extract, oil, and milk. Pour mixture into the dry ingredients and stir to combine. Fold until just mixed together.
- Lastly fold in diced pears until just combined. Let batter rest five minutes for pouring into muffin tin.
- Scoop into a 12-cup muffin tin that is lined with liners or sprayed with non-stick spray. Bake for 17-18 minutes, or until a toothpick inserted into the middles comes out clean.
- Let rest in muffin tin for 1-2 minutes before removing and allowing to cool on a wire rack. Serve while warm.
