Description

This Avocado Coleslaw with Stone Fruit and Berries is a summer staple to serve with all your grilling dishes!


Ingredients

Units Scale
  • 6 cups Red and Green Shredded Cabbage
  • 1 Avocado
  • 1/4 cup Olive Oil
  • 1/4 cup Lemon Juice
  • 2 Tbsp Fresh Jalapeno
  • Salt and Pepper to taste + 2 tsp for Wilting Cabbage
  • 1/21 cup Cherries, pitted and halved
  • 1/21 cup Strawberries, cut up
  • 1/2 cup Blueberries
  • 1/2 cup Apricots, cut up

Instructions

  1. n a large colander, add in shredded cabbage. Season with 2 teaspoons of salt and toss to combine. Let the mixture rest over a bowl, for about 1 hour to release some of the water from the cabbage.
  2. In the mean time, add the avocado, lemon, salt, pepper, and jalapeno into a food processor. Whiz until smooth. Season with additional salt and pepper if needed.
  3. Dice up the fruit if you have not yet done so.
  4. Once the cabbage has settled, rinse well with water and drain thoroughly. In a large bowl, toss to combine with the avocado dressing, and add in fresh fruit.
