Description

Perfect for those on Whole30, or just needing some lean protein variety, these Whole30 Greek Beef and Lamb Meatballs are perfect to eat on their own or toss into a quinoa or tabbouleh salad for added protein and flavor. 


Ingredients

  • 1 pound Ground Beef
  • 1 pound Ground Lamb
  • 1 tsp Salt
  • 1/2 tsp Ground Pepper
  • 23 Tbsp Minced Fresh Mint
  • 1/4 cup minced Shallot (1 large)
  • 1 tsp Oregano
  • 3 cloves Garlic, minced

Instructions

Preheat oven to 400 degrees.

In a large mixing bowl, combine all ingredients and mix together. I recommend using your hands to make things go quickly. Using a small 1″ cookie scoop, scoop and roll out the meat balls, placing them onto a lined cookie sheet. Space the meat balls about 1″ apart.

Bake the meatballs for about 15 minutes, until they reach 165 degrees. Place them onto a plate lined with paper towels to drain, and then use immediately or place in a sealed container in the fridge for later use.
