Description

These crispy, golden buttermilk waffles are bursting with coconut flavor!  Try them for a breakfast treat, or any time you have a coconut craving.


Ingredients

  • 2 1/2 cups Flour
  • 2 Tbsp Sugar
  • 1/2 tsp Salt
  • 1/2 tsp Baking Soda
  • 1/2 cup Sour Cream
  • 2 Eggs
  • 1/2 tsp Vanilla
  • 1/4 cup Vegetable Oil
  • 1/2 cup Seltzer Water
  • 3/4 cup Buttermilk
  • 1/2 cup Toasted Shredded Coconut

Instructions

  1. Preheat waffle iron to medium high heat.
  2. In a medium bowl, whisk together flour, sugar, salt, and baking soda.
  3. In a separate bowl, whisk together sour cream, eggs, vanilla, oil, and buttermilk.
  4. Gently pour the liquid ingredients into the dry ingredients and gently stir to combine. Gently mix in the seltzer water and toasted coconut.
  5. Pour into heated waffle iron and bake until golden brown. Serve immediately with maple, or coconut syrup.
