Description
These whipped sweet potatoes are a quick and nutritious side dish. The sweetness is a great compliment to a savory main dish!

- 1 Large Sweet Potato, peeled and cubed
- 1/3 cup Plain Greek Yogurt
- 2 Tbsp Butter, softened
- 1 1/2 tsp Fresh Chives
- 1 tsp Garlic, minced
- 1/8 tsp Cayenne Pepper
- Salt and Pepper to Taste
Instructions
- Bring potatoes to a simmer in a medium saucepan. Simmer until fork tender, about 10 minutes. Drain thoroughly.
- Place back into sauce pan, using a masher or heavy-duty whisk, beat in Greek Yogurt and butter.
- Add in half of the chives, garlic, peppers and salt. Beat until light and fluffy in texture.
- Serve, topped with remaining chives for garnish.
