Spinach and Sausage Croissant Breakfast Casserole

Description

Elevate your weekend breakfast with a spinach and sausage croissant strata is an easy breakfast casserole recipe that you can bake in the morning!


Ingredients

    • 6-7 Butter Croissants

    • 12 Large Eggs

    • 1 cup Half and Half

    • 2 Onions, halved and thinly sliced

    • 1 pound Breakfast Sausage - links cut into bite size pieces or bulk sausage, cooked

    • 2 cups Sliced Mushrooms

    • 1 cup Wilted and drained Spinach

    • 3 cups Shredded Cheese

    • 2-3 Tbsp Butter

    • 1-2 Tbsp Olive Oil

    • Kosher Salt and Pepper, as needed.


Instructions

    1. Preheat oven to 350 degrees.
    2. Caramelize onions in a large skillet with butter and olive oil, until golden brown. Set aside to cool slightly. 
    3. While onions cook, cut croissants into large cubes and set aside.
    4. Crack and whisk eggs with milk and half and half. 
    5. In the same skillet that you used for the onions, you can cook the sausage. Remove from skillet and set aside. Repeat with the spinach. Once cooled enough to handle.
    6. You can also use bacon in place of sausage if you feel like it! 

    1. Spray 9×13 inch baking dish with non stick spray, or my favorite lasagna pan, with non stick cooking spray. Spread half of the bread into the bottom of the prepared baking dish. Sprinkle with half of the toppings, sausage, mushrooms, spinach, and cheese. Repeat with a second layer of croissant pieces and toppings.

    1. Pour the egg and milk mixture evenly over the top of the casserole and sprinkle with additional cheese. 

    1. To allow it to sit overnight, cover the pan with foil and place in the refrigerator. If you are not able to let it sit in the fridge overnight, that is fine. Press down gently on the strata to ensure that all the bread has soaked in as much of the egg mixture as possible.

    1. Cover the strata/breakfast casserole with foil. Pierce a hole into the top of the foil and bake the breakfast strata for 20 minutes, covered. 

    1. After 20 minutes, remove the foil and bake an additional 20-25 minutes, checking with an instant read thermometer to make sure the middle has reached temperature. Allow it to sit on a wire cooling rack for 10-15 minutes before serving.
