Description

Morning glory bread has it all! Fruit, vegetables, and nuts make for a wholesome quick bread the entire family will love.


Ingredients

Scale
  • 2 cups Flour
  • 1 cup Sugar
  • 1 Tbsp Cinnamon
  • 1 1/2 tsp Baking Soda
  • 1 cup Grated Carrots
  • 3/4 cup Raisins
  • 3/4 cup Shredded Coconut
  • 3/4 cup Chopped Pecans
  • 1 cup Zucchini, grated
  • 1 Apple, peeled and grated
  • 4 Eggs
  • 1/3 cup Vegetable Oil
  • 1 Tbsp Vanilla

Instructions

  1. Preheat oven to 350 degrees.
  2. In a large bowl, whisk together flour, sugar, cinnamon, and baking soda.
  3. Into another large bowl, combine carrots, raisins, coconut, pecans, zucchini and apples, eggs, vegetable oil and vanilla. Mix with a hand mixer until combined thoroughly.
  4. Pour the wet mixture into the flour mixture, gently folding it together with a rubber scraper or spatula.
  5. Prepare a loaf pan with non-stick spray. Line the pan with a parchment paper sling, and lightly spray again with non-stick spray. Pour the batter 3/4 the way up the pan. Bake on the middle rack of the oven for 50-55 minutes, or until a toothpick inserted into the center comes out clean. Cool on a wire rack in the tin for 10 minutes, prior to removing the loaf to cool completely before slicing and serving.
