SALAD INGREDIENTS:
- 1/2 head Green Cabbage, Shredded
- 1/2 head Red Cabbage, Shredded
- 2 Carrots, shredded
- 1 Shallot, minced
- 1 can (8 oz) Mandarin Oranges, reserve juice
- 2 cups Sugar Snap Peas, snapped in half
- 1/2 cup Cilantro, minced
DRESSING INGREDIENTS:
- 2 Tbsp Ginger, minced, or paste
- 2 Cloves Garlic, minced
- 1/2 tsp Chili Pepper Flakes
- 3 Tbsp Lime Juice
- 1/2 cup Prepared Peanut Sauce, jarred or FRESH
- 1/2 cup Chow Mein Crunchy Noodles
Instructions
In a large bowl, whisk together all dressing ingredients. On top, add the remaining ingredients (except chow mein noodles) and toss together with the dressing until combined.
Serve and top with crunchy chow mein noodles. Top with additional cilantro for garnish.
