Goat Cheese Crostini with Herbs and Bacon

Description

New Years Eve is on it’s way – so pop some Gloria Ferrer sparking wine and load up on some classic appetizers for a sparkling way to start the new year!


Ingredients

Units Scale
  • 1 loaf Baguette, thinly sliced
  • 1/41/2 cup Olive Oil
  • 2 Cloves Garlic, lightly crushed
  • 4 ounces Goat Cheese
  • Herbs (Basil, Rosemary, Dill, your choice)
  • 4 Slices Bacon, cooked and finely minced
  • 1/2 cup Caramelized Onion

Instructions

  1. In a large flat bottomed saute pan, heat up several tablespoons of olive oil.
  2. While the oil heats, use the lightly crushed garlic and rub each slice of baguette with the the garlic. Set the bread aside.
  3. Add the used garlic to the oil and allow it to simmer gently for a few seconds until it becomes fragrant. Remove the garlic before it begins to cook or burn.
  4. Place the sliced baguette into the oil and coat all sides of the baguette slices in oil. Let the slices toasts generously, until golden brown, on both sides, before removing and setting aside on a paper towel lined plate.
  5. Add more oil in between batches of baguette if necessary. Continue this process until all slices are toasted.
  6. To assemble, top each slice of baguette with goat cheese, sprinkling with herbs, caramelized onion and bacon. Serve with Gloria Ferrer sparking wine.
