White Chocolate Cashew Biscoff Cookies

Description

These cookies are sweet, salty, white chocolatey and just Biscoffy enough to be utterly addicting.


Ingredients

Units Scale
  • 2 cups Flour
  • 1/2 tsp Baking Soda
  • 1/2 tsp Salt
  • 1 cup Brown Sugar
  • 1/2 cup White Sugar
  • 1 cup Butter
  • 2 whole Eggs
  • 1 tsp Vanilla
  • 1/2 cup Biscoff Spread
  • 1 cup White Chocolate Chips
  • 1/2 cup Chopped Cashews

Instructions

  1. Preheat oven to 300 degrees. In a large bowl, whisk together the flour, baking soda and salt. Setting aside.
  2. With your handy dandy mixer, blend together the two sugars and then 1 tablespoon of butter at a time until mixed. Mix on medium until it becomes light and creamy.
  3. Now, add in one egg at a time mixing for 30 seconds in between each egg. Scrape down the bowl a couple of times if necessary.
  4. Add in the vanilla. Mix. Pour in white chocolate chips, Biscoff spread and cashews. Mix until evenly combined.
  5. Dollop 2 tablespoons worth of dough onto your baking sheet and bake at 300 for 17-20 minutes, or until golden brown. These are baked low and slow. The end result is a scrumptious cookie perfectly crisped on the outside and soft on the inside.
