Description

The best tomato bean salad comes together in 10 minutes with cherry tomatoes, cannellini beans, cucumber, basil, and a simple homemade balsamic vinaigrette.


Ingredients

Tomato Bean Salad

  • 1 pint Cherry Tomatoes
  • 1 can (14oz) Cannellini Beans, drained and rinsed
  • 1/2 English Cucumber, diced
  • 1/4 cup finely sliced Shallots
  • 1/4 cup Basil, chiffonade

Balsamic Dressing

  • 1/4 cup Olive Oil
  • 2-3 Tbsp Balsamic Vinegar
  • Salt and Pepper
  • 2 cloves Garlic, grated or finely minced
  • 2 tsp Dijon Mustard

Instructions

In a large bowl, combine the cherry tomatoes, rinsed beans, diced cucumber, shallots, and toss gently to combine. Sprinkle chiffonade basil leaves over the top.

In a liquid measuring cup, whisk together all dressing ingredients, from olive oil to mustard until smooth and combined. Pour over beans and tomatoes, and toss to combine. Chill until ready to serve, tossing once again to mix dressing evenly over salad.
