Description

Take a bite of this crispy and totally cheesy roast turkey and veggie panini for those chilly fall nights. Its even better with a side of completely creamy creamless tomato soup!


Ingredients

Units Scale

For caramelized onion:

  • 1 Onion, sliced and caramelized
  • 2 Tbsp Butter, for caramelizing onion

For Paninis:

  • 4 slices Hearty Garlic Artisan Bread
  • Mayonnaise
  • Dijon Mustard
  • 1/2 pound Roast Turkey Sliced Lunchmeat
  • 1 Tomato, thinly sliced
  • 1 cup Spinach
  • Slices of Your Choice of Cheese – I used Colby Jack
  • Non-Stick Cooking Spray

Instructions

To Caramelize Onion

  1. Preheat a skillet over medium-high heat. Add in butter and allow to melt and start to simmer.
  2. Add in thinly sliced onion and toss to coat in butter. Let simmer and stir occasionally until the onions turn golden brown and reduce down. Remove from skillet and add to sandwich.

For Paninis

  1. Preheat Panini Maker to 375 degrees. If you don’t have a panini press – make this like a grilled cheese, it’s fantastic!
  2. Top slices of bread with mayonnaise and Dijon mustard.
  3. Top slice of bread with turkey, tomato, caramelized onion, spinach and then cheese. Top with last slice of bread.
  4. Spray down panini press with non-stick spray, and press until bread is golden brown and the cheese has melted inside.
  5. Remove from press, slice and serve.
