Brown Sugar Maple Pecan Cookies

Description

Soft and chewy brown sugar cookies are studded with pecans and flavored with maple.


Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 3/4 cup butter, room temperature
  • 1/4 cup light brown sugar, packed
  • 3/4 cup dark brown sugar, packed
  • 1 egg
  • 1 tsp. maple extract
  • 1/2 cup chopped pecans

Instructions

  1. Preheat oven to 350 degrees. Line two cookie sheets with parchment paper or a Silpat liner.
  2. In a medium bowl, mix the flour, baking powder, coffee grounds, and salt until combined. Set aside.
  3. Cream the butter and sugar until combined and fluffy, about 3 minutes.
  4. Add the egg and vanilla and beat for 3-4 more minutes, until the mixture is very light and fluffy.
  5. Add in the dry ingredients and mix just until combined. Refrigerate the dough for at least 30 minutes.
  6. Scoop the dough onto the prepared cookie sheets by rounded teaspoon full and flatten slightly.
  7. Bake in the preheated oven for 12-14 minutes until lightly browned on the edges. Cool on a wire rack.
