Description

These fluffy pancakes have a light texture from cottage cheese in the batter, which melds perfectly with their fresh lemon blueberry flavor.


Ingredients

  • 4 Eggs
  • 1 cup Cottage Cheese
  • 1/2 cup Flour
  • 1 Tbsp Sugar
  • 4 Tbsp Butter, melted
  • 1 tsp Vanilla
  • 1/2 tsp Lemon Zest
  • 1 1/2 cup Blueberries

Instructions

  1. In a bowl, beat eggs until thoroughly whisked. Stir in flour, cottage cheese, sugar.
  2. Stir in melted butter, vanilla and lemon zest. Mixture will be slightly lumpy from cottage cheese.
  3. Heat a large non-stick skillet over medium to medium high heat. Grease pan with non-stick spray or additional butter.
  4. Pour ¼-⅓ cup of mixture into the pan. Sprinkle batter with a few blueberries. Cook until bottoms have turn golden brown. With a spatula quickly flip onto other side and continue to cook until the other side turns golden brown.
  5. Place pancakes onto a baking sheet on a 200 degree oven to keep warm until remaining pancakes are done. Serve warm and devour!
