Description
These fluffy pancakes have a light texture from cottage cheese in the batter, which melds perfectly with their fresh lemon blueberry flavor.

Instructions
- In a bowl, beat eggs until thoroughly whisked. Stir in flour, cottage cheese, sugar.
- Stir in melted butter, vanilla and lemon zest. Mixture will be slightly lumpy from cottage cheese.
- Heat a large non-stick skillet over medium to medium high heat. Grease pan with non-stick spray or additional butter.
- Pour ¼-⅓ cup of mixture into the pan. Sprinkle batter with a few blueberries. Cook until bottoms have turn golden brown. With a spatula quickly flip onto other side and continue to cook until the other side turns golden brown.
- Place pancakes onto a baking sheet on a 200 degree oven to keep warm until remaining pancakes are done. Serve warm and devour!
