Easy Beer Cheddar bread with extra delicious veggies.

  • 1 Tbsp. Olive Oil
  • 2 Cups of chopped Mushrooms
  • 1/2 Yellow Onion, chopped
  • 3 Cups Flour
  • 3 Tablespoons Sugar
  • 2 teaspoons of Baking Powder
  • 1 teaspoon Salt
  • 1 Cup Grated Cheddar, or other cheese of choice (Gouda is great!)
  • 1 Bottle  (12 oz) or can of your choice of beer, like an amber or wheat.
  • 4 Tablespoons Butter, melted

Preheat oven to 375.

In a skillet over medium high heat, add in olive oil and saute mushrooms and onions until softened and beginning to caramelize. Remove from the heat and set aside.

In a large bowl, combine all dry ingredients and whisk together. Make a well in the middle of the flour mixture. Add in the onion and mushroom mixture, shredded cheese, and lastly the beer.

Mix until the batter is just combined, but do not over mix.

Pour batter into a 9×5 inch loaf pan that has been sprayed with non-stick spray. Drizzle half of the melted butter on top of the batter. Bake bread for 35 minutes. Pour remaining butter over the top of the bread, and continue baking another 20-25 minutes, until a toothpick inserted into the center comes out clean.

Cool the bread on a wire rack in the pan for 5 to 10 minutes prior to removing it from the pan and allowing it to cool it entirely before slicing it, or it will crumble.
