Single Girl Mac and Cheese

There are definitely pros and cons of Ben being back on night shift at the hospital. The last few months of having him on days has been really wonderful, and I realized how much time we were missing out on together when we on opposite work shifts. And it was great to spend each evening together, walk Huck together, and actual sleep next to each other again.
But there are plusses of this opposite shift thing, too…
Pro No. 1 – I get the bed all to myself. Well, and Huck. He loves taking up Ben’s spot when he’s gone. Though he also loves taking my spot when I’m gone and Ben is sleeping. Huck takes his job as Master of Sleep very seriously.
Con No. 1 – We are always running about trying to get ready for work, or trying to get ready for bed – so the quality time together has to be scheduled and thought through. It’s definitely a weird thing.
Pro No. 2 – We don’t bicker, but that’s because we don’t see eachother. Which is definite con.
Con No. 2 – See above. I never see him! Wahhh! Oddly enough, I really love spending time with my husband. I don’t know if all women can say the same thing, but I married a good one and he’s my number 1 favorite person to spend time with.
Pro No. 3 – I get to make endless mac and cheese for one! I found the magic formula that makes this Single Girl mac and cheese ultra decadent, and it only requires one pan.
Con No. 3 – Ben’s not here to share this with – and I know he would love it like woah! But, I know Huck likes it – he licked the bowl CLEAN!
So if you are looking for a quick dinner for one, especially on those days that you just can’t even, which I feel like I’ve been having a lot of lately, this is a sure winner that won’t leave you with that feeling of guilt, regret or a pile of dishes at the end! And THAT is a big giant PRO.

Single Girl Mac and Cheese

Ingredients
- 1 serving (2 ounces, based on pasta package) Barilla Protein Plus Rotini Noodles, or noodle of choice
- 1 Tbsp Butter
- 2 Tbsp Flour
- 2/3–3/4 cup Milk
- 1/4 tsp Mustard Powder
- 1/2 cup Shredded Cheese (I used Colby Jack and White Cheddar), or cheese of choice
Instructions
Bring salted water to a boil in a medium sauce pan. Prepare pasta according to package directions. Drain.
In the same pan, with the burner on medium heat, melt butter in the sauce pan until simmering. Sprinkle flour over the melted butter and whisk to form a pasta. Allow the pasta to cook until golden brown. Slowly whisk in milk until it creates a smooth sauce. Start with pouring in approximately 2/3 cup of milk. Use the remaining milk, up to 3/4 cup of milk for a thinner cheese sauce. Sprinkle in mustard powder. Add in shredded cheese and stir in until thick and creamy.
Add in drained pasta noodles and fold in to the cheese sauce until the noodles are all covered. Serve immediately.

I feel ya! I work nights so dusty and I never see each other too. And when it is harvest time, I wonder if I have a husband or not! I also agree, it is really nice having the bed to yourself 🙂

I have total sympathy! My fiance and I worked opposite shifts for a year and it was torture! It makes the time you spend together so much better though 🙂 And I’m sure this mac and cheese helps too!
